At Great Lakes Project X at Wvrst. Slightly sour aroma, nicely tart flavours. Like cider.

[4928-20121108] Tap. Odd sour yeast note in the aroma. Slightly hazy, light orange brown body with a quick foamy white head. Light apple-infused straw yeast flavour with a sweet aftertaste. Light-medium body has a light tang. Interesting to sample. (6/3/7/3/14) 3.3

Draught at ’Project X’ at Wvrst, Nov. 8. Pours a hazy gold with a small lasting frothy white head. Mild but nice aroma of cider first followed by some light funkyness, pepper and yeast. Flavour also of cider first followed by a Saison-like beer in the back. Average bodied. Pretty good, and interesting, it’s more cider-like then I expected.

UPDATED: NOV 14, 2012 2012-11-08. Lightly hazy dark yellow body with a small off-white head. 3+ Aroma is pleasantly odd, sort of yeasty vaguely cheesy notes that turn more floral as it warms, apple, woody farmhouse cider like quality to it. 7+ Flavour has a good amount of dry wood - dried cedar or oak like quality to it - fruity apple, brief crisp fruity apple gives way o more woody character in the finish. 7+ Smooth average plus palate, pleasant carbonation. 3+ I have looked forward to this since they announced it, and I quite enjoyed it. The wood is a bit more prominent than my preference but I like the cider highlights. My understanding is that they plan to refill the barrel as they pull beer out so I am very curious to see how it develops down the road. On tap at Project X at Wvrst, Toronto

This was a saison aged in a cider barrel. The cider gives it a ice sour edge. The initial smell and taste is very winey. The saison spices definitely in the secondary. I likely had the first or second sample at WVRST tap takeover.

Pale golden pour. The nose is softly peppery and a little bit funky. A soft barrel-aged funk. A touch of light sweetness and some bright peppery character. A little bit of light fruit and some spice as well. Lovely beer.
