Dec 22, 2004 Bottled for the Craft Brewers Conference for 2002 in Cleveland, AND MY # 500 BEER!!!!! I hope this isn’t terribly oxidized since the bottle was only full 1/4 of the way up the neck: Golden honey color with a very short lived white head. Clarity has improved greatly since I had it on tap @ the CBC in May of 2002. Probably having to do with sitting in my fridge for almost 3 years. Ginger still very apparent as is cardamom. Some plummy fruit and pepper from yeast as it warms. A lightly floral character (probably from the chamomile). A lightly grainy malt pops in, but is mostly drowned by the spices. Flavor is majorly ginger...STILL!!! Well balanced, chamomile has the flavor of chamomile tea! Light clove flavor from yeast, slightly sweet finish and aftertaste which is still ginger. Very light fruitiness is like dried apricots. Very crisp finish. Lighter medium body, dry m/f, higher carbonation, and well hidden alcohol. Overall a very tasty beer. Not your typical saison, but good anyway.

Jul 22, 2004 Thanks Kujo! Not much of a Saison, but very enjoyable beer anyway. Honey colored, small head that dissapates to none. Aroma is sweet, cinnimony, alspice, coriander. Mine tasted like a spicey pumpkin pie minus the pumpkin. No alcohol flavor to speak of. Slightly tangy finish.

Jun 3, 2002 4/2002 on tap, brewed for the 2002 Craft Brewer’s Convention (I was in the right place at the right time!)- hazy orange/deep golden color. thick yet light tasting body (?). coriander/orange peel flavors burst out, almost like different tastes with every swallow - a cornucopia of flavors. 7.5% alc., but it didn’t taste like it. very well done.

May 22, 2002 Aroma - coriander, grassy, cloves, some higher alcohols, very busy. Flavor - malty, dry, orange peel/ coriander flavors mixed with pepper and tea. Finish - dry & lightly malty

May 20, 2002 A nice beer,slightly hazy,orange in color,friuty,with hints of corriander, ginger,slightly malty,low to med body,spicey on the tongue,and a little phenolic,a little sweet on the finish with a nice warming from the alcohol
