Aroma is rather hoppy, but balanced with the caramel and woody malt aromas. Nice. Taste is similar, with plenty of deep malt characteristics, and it finishes like an IPA. As it warms, the hop aroma is rather vegetable-y. Basically, you take an IPA and increase the deep malty flavors, make it slightly thicker, and you’ve got something like this. Malty sweet aroma, some heavily caramelized crystal and toasted malt with a sweet cherry fruitiness and a spicy hop bouquet throughout. Pine and earthy/mildly resinous hops. Sweet malts up front balance with the strong hoppiness later on. A bit of honeyed character. Some pine and black pepper on the finish. Aroma is both fruity and herbal. Nuts, lemoms, bourbon and vanilla are predominant. Taste is the same and add in some citrusy/piney hops and chocolate malts for a nice balanced finish. Much hoppier than you would expect for a winter beer. Freshness date: Nov 30/06. Medium reddish-brown appearance, yellow edges; tannish head with large bubble formation; partly retained with minimal lacing. Huge citrus hop nose: grapefruit with some piney notes, very sweet. Medium mouthfeel, light carbonation, tea-like and mouth-drying; chewy citrus and piney hop bitterness, minimal malt presence (a bit of maple syrup), but the bitterness is reserved enough to keep things drinkable. It pours a translucent dark red with a thin tan head. Heavy caramel malts with hints of biscuit in the aroma. Malty caramel and butterscotch notes followed by a solid hop kick that leaves a nice lingering bitterness.
