UPDATED: FEB 14, 2013 Special thanks to Jeff for sharing his bottle. Apparently this is a rep-only sort of deal. Aroma of candied apples, funky brett yeast, slight oak and sour cherry. Pours red with nice pink film. Taste is wonderfully tart. Sour cherry, crab grass, great wood bourbon notes. Opens with a sharp tartness and finished with a sweet candy finish with sour cherry aftertaste. Simply a wonderful brew.

750 ml bottle into tulip glass, bottled on 4/30/2015. Pours fairly crystal clear ruby red/copper color with a 2 finger dense light khaki head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings on the glass, with a good amount of streaming carbonation retaining the cap. Aromas of tart cherry, cranberry, green apple, lemon, red grape, plum, caramel, brown sugar, toffee, toasted oak, vanilla, light bourbon, light red wine vinegar/leather, light musty funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, dark malt, and bourbon barrel notes; with good strength. Taste of big tart cherry, cranberry, green apple, lemon, red grape, plum, caramel, brown sugar, toffee, toasted oak, vanilla, light bourbon, light red wine vinegar/leather, light musty funk, and yeast/oak earthiness. Fair amount of fruity/acidic tartness and oak spiciness on the finish; with lingering notes of cherry, cranberry, green apple, lemon, red grape, plum, caramel, brown sugar, toffee, toasted oak, vanilla, light vinegar/leather, and yeast/oak earthiness on the finish for a while. Damn nice robustness, complexity, and balance of fruity/funky/acidic yeast, dark malt, and bourbon barrel flavors; with a great sweetness/tartness balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, moderately acidic, and slightly slick mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an excellent Flanders red ale style. All around great complexity, robustness, and balance of fruity/funky/acidic yeast, dark malt, and bourbon barrel flavors; and very smooth to sip on with the balanced acidity. The bourbon barrel does add a some additional unique complexity; but the overall beer tasted very traditional to style. A very enjoyable offering.

Aged Cellar #3 Series: Pours plum into the glass with a wispy head that reduces to trace lacing. The nose is of sour cherries and some light brett funk. Flavor are of unripened bing cherries, some brett funkiness, red vinous notes, oak tones, light lactobacillus notes and sour mix. Vinous notes come through at the end, providing a finish of slight sweetness in contrast to the tart unripened citrus/berries at play. The mouthfeel is active, with soft carbonation levels and a complex palate. The nice oak overtones make for a dry woody essence that carry a hint of bourbon underlying all of the tart citrus and funk. A complex palate ensues, with a vinous mouthfeel that goes down like a nice cab-franc. Very nice aged Flanders here!

750 c&c from Capitol Beer in Sacramento, CA. Pours darkly ruddy, but clear, with no even an attempted head. Aroma is West-Vlaanderen with a hint of bourbon. Full body or damn near. Flavor is sour/sour with red berry and lots of flavors that aren’t bourbon. Like oak. Yet bourbon notes do pervade the liquid. Especially notable during belches. Astringent. Tart. Sour. Oak. Red berry. OMYFG! This should be in the nomination list for beer of a life time.

Keg at the Copenhagen Beer Celebration 2014, green session. 03/05/2014. Rich red / burgundy coloured pour with a cream lasting head. Aroma is tart sharp acid, raspberry, musty. Flavour is sharp acid, grape skins, tanin, touch of vinegar. Palate is semi-sweet nice dryish finish. Lingering socks and harsh acid. Yeast character lacks complexity.

Oak-aged sour ale apparently inspired by ’Flemish red’, the sour variant of oud bruin. Off-white, creamy, stable head, cloudy burgundy colour. Strong aroma of wine vinegar, old madera, passion fruit, gooseberry, redcurrant, lemon, white grapes, wood. Taste begins with lemony freshness and red berry kind of sourishness, caramelly malts, sweetish base, very fruity, increasing acidity towards the finish and ending dry, long and complex. Very nice.
