Smell: A mix of grains and grapefruit held together by mashed bananas and tossed with pine needles and white pepper.
Taste: Pale and Belgian maltiness, with a touch of grain, and a brief, though refined sweetness. Tastes of bananas, citrus grapefruit, and pine before a caustic, moderate bitterness is unleashed upon the tongue. Dash of spice. Light yeastiness. Some floral and fruity peach hints to be found during the rare times when the bitterness lets up. Finishes crisp and with a bitterness that lasts well into the aftertaste.
Mouthfeel: Medium-plus body. Moderate carbonation.
Drinkability: Yep, it’s a bitter tripel, alright. It performed a bit better than expected, but I wouldn’t push over an old lady to get a bottle unless she was really really asking for it (to be pushed, not the bottle). Pailhead (2612), Allen Park, Michigan, USA

Bottle: The aroma is Belgian yeast, cotton candy, and some citrus hoppiness. It pours a cloudy brownish-orange with a small soapy white head. The flavor mimics the aroma. Medium-to-full mouthfeel: chewy, dense fruitiness, basic Belgian esters, and earthy / mineral bitterness; decent hybrid rendition, but not nearly as good or as clearly expressed as the best examples. Pours a decent cheddar orange with a nice head and delicate yet thick lacing. Aroma is a bit unusual, a blend of new plastic and aged sharp cheddar with a touch of sweet grass. Flavor is a hybrid of pine tar, grapefruit, and a touch of butter. Notes of cedar seem to be pointing skyward as well. Nice mouthfeel. Unusual beer for sure, but very tasty. The beer is quite hazy and is topped by a one-finger thick pale head that sits atop an orange-gold colored beer. Aromas of earthy spice, that sort of quintessential signature Belgian nose; notes of grass, with an underneath fruit mix of pear, apple and even some citrus (lemon and some orange peel). This is a really nice, interesting nose.
The beer is fairly dry tasting, yet it has a heft and body to it that belies this. I think the earthy, chewy spice notes help to dry out what would otherwise be a beer with some sweetness. Grassy hop notes are noticeable up front and the beer picks up some pale-grain sweetness after the first couple of sips; still it is fairly dry over all. A biting, herbal hop note is found in the finish; an austere bitterness as well as some hop flavor contributes to this.
