Palate Wrecker was originally brewed for the Hamilton’s Tavern 2nd Anniversary celebration. It’s the most complicated West Coast–inspired IPA we have ever brewed—mashing and sparging with hopped wort, in addition to our hop layering regimen for IPA. We use almost 6 lbs/bbl of Columbus and Centennial hops to create this very bitter hop monster (tested at 149 IBU and no extracts in case you were wondering). UPDATED: MAR 10, 2014 1pt 6oz bottle poured into a tulip pub glass. Initially, bread, chalk, and caramel aromas come off this one, but the bread and chalk disappear leaving the caramel as the primary aroma note. Sweet fleshy fruit (mango primarily comes to mind) comes through as well with a nice floral hoppy crescendo. An undertone of blueberry muffins comes through as it warms. It pours an effervescent, clear honey orange color with a swiss cheese, light, but creamy head that sticks around throughout most of the drink and leaves behind an abundant, splotchy lacing. The medium-high, but smooth, bitterness is balanced nicely by a medium malty sweetness - the two weave in and out throughout the palate. The full body is oily, and a bit stick, with a fairly low carbonation. It starts out with a floral and resin note which turns to citrus fairly early. It doesn’t take long before a raisin / fig quality dominates the palate. It finishes with a nutty with a light, mellow resin dusting. By the beginning of the aftertaste, this mellow resin turns to a strong pine note with an earthy / gravely feel to it. The longterm aftertaste is a thick and chewy toasty, pine, and caramel combination. Surprisingly (and dangerously) drinkable for a "hop bomb."

Tap, hops and pie. Clear orange gold with a frothy off white head. Aromas of citrus, mango, pine resin and light spice. Flavor is sweet mango and citrus with a bitter pine and spice finish. Medium bodied lingering pine.

Tasted on tap at Quenchers in Chicago. It poured a hazy golden orange with a white head. Big fruity hop aroma and powerful hop taste. Very tasty!

UPDATED: APR 25, 2014 From the tap at Beverage World, this is a deliciously well-crafted DIPA. This pours a light burnished bronze colour, with a full frothy head. Fruity lime and zest on the nose are followed by loads of hop complexity on the palate with grass, pine, celery, and grapefruit, mingling with hints of malty glazed doughnut flavours. Substantial but balanced mouthfeel, with rich, bright, bitter finish, leaving a white pepper, citrus, and grassy aftertaste. This is an excellent hop-heavy DIPA!

Had it on tap at Jerry’s Sandwich Shop, pours a classic clear amber hue. This by far is the most floral aroma beer I’ve ever whiffed. I mean it just smells pretty, and it had to be one of the hoppiest beers ever!
