Palate Wrecker was originally brewed for the Hamilton’s Tavern 2nd Anniversary celebration. It’s the most complicated West Coast–inspired IPA we have ever brewed—mashing and sparging with hopped wort, in addition to our hop layering regimen for IPA. We use almost 6 lbs/bbl of Columbus and Centennial hops to create this very bitter hop monster (tested at 149 IBU and no extracts in case you were wondering). Refrigerated 12 oz. squat brown bottle poured into a glass. Orange with small off white head. Aroma is dank/malt, medium body, low carbon.action, and some small-bubble lacing. Taste is dank hops, pine hops, malt backbone, and bitter finish. Hop Bomb.

Clear amber, cream head Rich aroma, malts, cream,mou, aromatic hops with bittersweet citrus notes, balsamic notes, light caramel and toffee. Spectacular complex taste. Aggressive herbaceous bitterness well balanced with mellow mou, caramel and aromatic citrus notes. Hoppy aftertaste.

Pours amber-blonde with a big white head and a nose that screams Centennial hops in a loud and beautiful manner. Flavor lives up to its name with an enormous kick of both floral and bitter from an almost silly amount of hops, though it’s quite well balanced by a big sweet malt and the high gravity. Backside is sticky and bitter. This is what big IPAs are all about.

Really love the excessive boldness of the hop aroma, along with the extreme bitter hop flavor. Great bold color and obviously overly strong flavor throughout. Gets almost too bitter by the end, but I like it a lot despite the high cost

Pours a dark gold/amber with a thick white head, lots of lacing on glass. Nice citrus hoppy aroma. Hoppy bitterness right up front when tasted, a little resin flavor follows but nothing over powering easy to drink.

Shiny copper, perfectly clear. One finger of very dense, sticky, sand-colored head becomes a fleece-like top layer and deposits thick, grippy walls of lace. Funky and dank nose. Onions first, then grapefruit, grass, a touch of pineapple, a little baked bread, some caramel. Big bitterness in the flavor. Grapefruit pith, a touch of dank weed, burnt sugar. It’s a little funky. Saltine crackers and a touch of biscuit come out as it warms. Maybe some floral character as well. Thick, syrupy medium body with moderate, pinching carbonation and just a hint of fizz. Alcohol is a mild warming in the throat. Decent. A nice big hop flavor here, and way bitter. It could actually use a little more malt to back it up. Palate not quite wrecked, but definitely bent.
