COMMERCIAL DESCRIPTION
Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

On tap at Beer Revolution. Aroma is a balanced blend of chocolate, roast and dark fruit with various chocolate notes being most prevalent. Milk chocolate and dark chocolate are present. Light roast character. Dark fruit notes are raisin and prune. No hop aroma. Pours black with a light mocha head with really good retention that clings to the edges. No lacing and big legs. Flavor is also dominated by rich chocolate notes. Sweet milk chocolate, some dark chocolate and light roast upfront. Mid palate you get some esters and some vanilla. Lots of complex barrel character to this one - hints of bourbon, the vanilla, some almond. Finish has a bit of alcohol heat and more bitter, dark chocolate. Full bodied with medium carbonation. No astringency and moderate alcohol heat. A lot of silkiness to this one. Overall this is a really enjoyable beer. Great chocolate and roast malt character with complex barrel notes. Big bourbon character. Much coconut character.Still pretty drinkable. Fuller mouthfeel, thicker black appearance. Interesting and worth a try.

Bottle 75cl. Opaque dark brown with a frothy to minimal brown head. Sharp aromas of bourbon, dark chocolate, vanilla, spices. Robust bodied with moderate to fizzy carbonation. Sweet and heavily bitter, with tremendous dark fruit and malt character, and a punishing bourbon finish. Blunt and heavy, very pleasant.

Draught @ CBC 2015. Pours viscous black with a small creamy dark mocha head that leaves some spotty trace on the glass while dissipating. Smell is malty with roasted malts, burnt caramel, toffee, vanilla fudge, charred wood, dark roast coffee, milk chocolate, coconut milk, green chili and bourbon alcohol. Taste is sweet, bitter and malty. Mouthfeel is round, tiny viscous, slightly astringent, tiny boozy and medium to full bodied. Finish is sweet and bitter with roasted malts, burnt caramel, butterscotch, vanilla fudge, charred buttery wood, dark roast coffee, milk chocolate, green chili and bourbon alcohol. A good stout with less than optimal barrel treatment. Tons of green chili and buttery woody vanillin.

Aroma is roasted malt, hazelnut, cherry, vanilla bean, barrel aged, a bit of coffee and chocolate and some booze. Appearance is black, light tan head, appears thick. Taste is vanilla, hazelnut, booze, cherries, roasted malt, chocolate, very nice. Mouthfeel is thick, rich, soft carbonation and creamy. Overall, this is one to revisit after the booze tones down.

Bottle pour opaque black with moderate tan head. Nose butter, vanilla, chocolate. Taste similar to nose. Milk chocolate, vanilla, light roast, and again, some butter. Nice mouth feel. Not sure if the butter is diacetyl or from the barrel.

Draft pour at Toronado Seattle, San Diego tasting event. Pours black with a tan foam ring head. Huge aroma of rich graham cracker, chocolate malt, milk chocolate, coffee. Like a chocolate chip cookie. Delicious, but extremely rich. Sweet. Cinnamon. Bourbon hinted finish, with a lingering vanilla chocolate. One of a kind stout for sure, but one of those stouts where just a few ounces is just right. Would love to try again someday. Very fun beer.
