Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

On tap at Beer Revolution. Aroma is a balanced blend of chocolate, roast and dark fruit with various chocolate notes being most prevalent. Milk chocolate and dark chocolate are present. Light roast character. Dark fruit notes are raisin and prune. No hop aroma. Pours black with a light mocha head with really good retention that clings to the edges. No lacing and big legs. Flavor is also dominated by rich chocolate notes. Sweet milk chocolate, some dark chocolate and light roast upfront. Mid palate you get some esters and some vanilla. Lots of complex barrel character to this one - hints of bourbon, the vanilla, some almond. Finish has a bit of alcohol heat and more bitter, dark chocolate. Full bodied with medium carbonation. No astringency and moderate alcohol heat. A lot of silkiness to this one. Overall this is a really enjoyable beer. Great chocolate and roast malt character with complex barrel notes. Great stout. Some sweetness. Caramel, chocolate. Pours black with good head and lacing. Comes together pretty well. Good beer. Lots of roast. Light bitterness. Tap at Snallygaster.

Tap at CBC 2014. Beer in the glass deep black, small head. Heavy malty aroma. Starts intense malty, spicy, a bit dry, some wheaty notes. Modest earthy. All in all well balanced. Warming-malty finish. Nice!

Keg at the Copenhagen Beer Celebration 2014, yellow session. 02/05/2014. Black coloured pour with a lasting loose tan head head. Aroma is milk choc, roast, lactose sugars and light cocnut. Flavour is smooth chov, toasted coconut, caramel. Palate is chalky, medium full, very smooth. Lating choc. Very drinkable. Good shit.

12 ounce bottle. Pours black with a smallish tan head. Aroma of malt, chocolate, coffee, and bourbon. Taste is roasted malt, chocolate, vanilla, caramel, coffee, bourbon, and a bit of wood. Very nice.

September 8th, 2012 - There was a long line for this brew at Greenflash’s event, likely owing to both the scarcity this beer suffered from back then, but also it’s heavy flavors and complex manufacture. Everybody loves a deep, profound beer, especially when it is the product of endless stages of processing and finagling. It’s a deep, dark beer, stopping sunlight like a hockey goalie intercepting a high-speed puck. An acrid coffee burn and the perfume of whiskey barrels slowly creeps from the top of the glass, intoxicating myself and nearby bystanders. Ethanol dominates the flavor (perhaps hinting that a little more aging could make this even better), but once that first fiery burn dissipates, the tongue is left with a warm, muscle relaxing blend of coconut, sticky whisky and the sensation of passing pain. The aftertaste is long, low, slow and boozy, with a sweetness that gets quieter and quieter until the next sip approaches. Before this brew I didn’t know Green Flash had an accomplished barrel aging program, but this shows off that they know what they’re doing with their barrels and racks.
