Aroma is a balanced blend of chocolate, roast and dark fruit with various chocolate notes being most prevalent. Milk chocolate and dark chocolate are present. Light roast character. Dark fruit notes are raisin and prune. No hop aroma.
Pours black with a light mocha head with really good retention that clings to the edges. No lacing and big legs.
Flavor is also dominated by rich chocolate notes. Sweet milk chocolate, some dark chocolate and light roast upfront. Mid palate you get some esters and some vanilla. Lots of complex barrel character to this one - hints of bourbon, the vanilla, some almond. Finish has a bit of alcohol heat and more bitter, dark chocolate.
Full bodied with medium carbonation. No astringency and moderate alcohol heat. A lot of silkiness to this one.
Overall this is a really enjoyable beer. Great chocolate and roast malt character with complex barrel notes. The alcohol is nicely balanced. I could drink a few of these.

Bottle with the new Cellar 3 branding. Abyssal black. A layer of froth the color of graham crackers and consistency of pancake batter sits atop the stygian liquid. A quick whiff relays notes of cocoa and long-aged whiskey, sure. But give it a swirl and the nose suddenly becomes spicy -- anise, molasses, peppercorns, Fuji apple. It settles into a backdrop of smoky peanuts and charred steak. Sharp whiskey is the first to arrive in the flavor. Beneath that are defined notes of maple syrup, toasted coconut, black licorice, maybe some blackberry. Coffee-bean bitterness. Fizzles out at the finish. Much thinner body than expected, almost watery. Cotton-soft, but just too insubstantial for the style. The boisterous alcohol, however, is kept mezzo-piano. You can hardly notice it. Silva Stout is exactly what I’d expect out of a bourbon-aged version of the Double Stout, which I find a little heavy on the anise notes. Worth a try, but not a second.

750 ml bottle from Bevmo. Says "Cellar 3" on the label.Release 2015 batch 01. Awesome brew that is big on the cocoa powder with a touch of whiskey and some red fruits. I can find nothing wrong with this beer. Totally awesome

10 oz draft pours a black color with a small white head. Aromas of cherry, coffee, chocolate, vanilla. Full bodied, awesome beer.

On tap at Capitol Beer & Tap Room. Pours dark brown with a thick light brown head and a chocolate aroma. There is a full-bodied dark molasses flavor with lots of chocolate and an oak and bourbons n finish.

Pours super dark, with tan head. Aroma of malt and wood. Taste is rich and complex, not as sweet as some. Hints of dark chocolate, coffee, and bourbon. Palate lasts, lingering notes of bourbon and wood. Thumbs up.

2012 bottle. It’s the color of extremely strong dark-roasted coffee. Odd aroma of sweet peanut butter, slightly oxidized malt, milk chocolate, rhubarb, and a touch of phenols. Heavy roast coffee and barley flavors lead the way followed with a solid milk chocolate tone and light bourbon. Thin body for a double stout. It has held up fairly well even with the minor oxidization.

(En fût et en cask au lancement à la brasserie): Anis, chocolat, caramel et vanille derrière un mur d’éthanol farouche. Le corps est magnifiquement crémeux, spécialement le cask, avec une bonne dose de torréfaction et de chaleur. J’ose croire que la bouteille sera moins agressive sur l’alcool sinon ce sera un candidat idéal au vieillissement....Parce que ça en prend.

Bottle thanks to Tom. Pours a dark brown with tan head that leaves gpod sticky lacing. The aroma is roasted malt, smoke, wood. Medium mouthfeel with sweet roast, raisin, wood, light vanilla, very nice.
