COMMERCIAL DESCRIPTION
Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

Omg!! Tried @pouritblack festival, really impressive , well balanced between oak aged and fresh stout. It’s amazingly flavoured, vanilla, chocolate, cherry and wood create a perfect combination and make this beer unique!

Cellar #3 Series, For how complex everyone has been claiming this to be I found it to be a little disappointing. Poured like motor oil, with a nice tan head. Flavor was just right at the front of the beer, had nice smooth chocolate, some vanilla and then the booze. Yet the aftertaste was incredibly acidic and put a huge damper in my palate. Perhaps my batch was infected, sad for my first stout from a favorite brewery.

Cellar #3 Series: Pours pitch black into the glass, with a wispy tan head that reduces to a thin ring of bubbles and trace lacing. The nose is of a nice mixture of chocolates, caramel, vanilla and butterscotch. Flavors follow suit, with many added complexities... burnt toffee, caramel, slightly soured lactose sugars, plums, butterscotch, vanilla, fresh coffee beans and woody notes. The finish is of spent toasted grains, roasted coffee, baker’s chocolate, dark stone fruit peel, oaked wood, numbing black licorice and bourbon. The juxtaposition of the texture is nice. The lactose sugars provide the main ingredient in the creamy mouthfeel, activated by plums, licorice and toasted malt, alongside a bourbon astringency. The palate ends up highly complex with a full body. It’s creamy texture, alongside dark esters, roasts, malty sweetness, and hints of burnt grains is phenomenal. The soured lactose sugars provide an underlying layer of of complexity normally not found in sweeter Impy Stouts. This comes together gorgeously, aged properly, like a cross between an English Harvest Barleywine and an Imperial Coffee Milk Stout. Thank goodness, I’m one of the lucky recipients of this awesome synergy. Prost!

A very complex stout to say the least. Lots of toffee, caramel, roasted malts, and some fruit. Smells sort of like tequila, and I am surprised it was not aged in tequila barrels. Pours like motor oil with a thick brown head. Had at home out of a bomber. Very boozy.

Sample at Jungle Jim’s International Beerfest, from a 750ml bottle. Nearly black color -- slight red around hte edges. Nice thin tan head. Somewhat loose splotches of lace. Fantastic vanilla, bourbon, oak in the aroma. Heavier whiskey in the flavor, some tannic. Touch of dark fruit, mild dark chocolate. Nice coffee. Just a touch astringent. Bigger bitter taste, light sweet, some alcohol warmth. A bit more boozy and less well-rounded than I hoped. Medium to bigger body. Smooth, kind of soft lighter carbonation. Dry finish. Interesting, tasty stuff... But for the style, expect a bigger amount of barrel character, and tannic dryness.

Brassée en avril 2013 et embouteillée le 16 février 2015. Ce stout est presque noir. La mousse est épaisse mais bien troué. Au nez, réglisse, chocolat et caramel forment un trio qui se frotte à un bourbon boisé et des parfums un peu verts. En arrière-plan, il me semble bien apercevoir de la noix de coco. Le goût manque de raffinement. Le bourbon n’est pas chaud mais son côté boisé apporte une astringence qui nuit à l’épanouissement des autres saveurs. Un côté végétal vient aussi déranger l’expérience. Le corps n’est pas ce que j’avais imaginé. La texture est mince sans être aqueuse. La finale est un peu chaude avec une touche rôtie et une touche résineuse (voire même végétale/boisée).

Sample at Tomahawk Warrior’s First Birthday party on 06/06/2015: Jet black pour with a medium tan head that recedes steadily to a film. Small patches of lacing on the glass. Aroma of chocolate, fruity oak and malt. Full-bodied with flavors of sweet chocolate and butterscotch, oaky vanilla, bourbon and fruit. The finish is sweet with a bourbon and malt aftertaste. Not sure if it is supposed to taste this way but it’s alright.

Corked bomber into snifter glass, opaque black color with thin dark tan head. Aroma notes of heavy caramel/butterscotch, vanilla, dried dark fruits, milk chocolate, marshmallow, whiskey and faint oak. Taste adds more milk chocolate, coffee mocha, molasses, sweet cherries, some wood char, bourbon and earthy bitterness. Heavy-medium body, light-moderate carbonation, soft with sweet roasty-booze finish. Doesn’t taste infected (not a diacetyl bomb) but it is a butterscotch/caramel bomb. Overall a interesting barrel aged RIS.

750 mL bottle poured into a snifter. Black with a nice khaki head, Chunky collar. Smell is insane butterscotch. A little bit is ok, but this is nuts. Some roasted malts and oak behind it, but it really dominates. The butterscotch continues into the flavor. Some chocolate and lots of oak. Sharp flavor in the finish I can’t place. High carbonation. Medium low body. Not much good going on in this beer. I have never tasted that much butterscotch in a beer before.
