Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

bottle. Pours pitch black with small head. Aroma is roasted coffee, chocolate, vanilla. Taste is coffee, roasted, chocolate, nice. Very nice stout.

Sample at Tomahawk Warrior’s First Birthday party on 06/06/2015: Jet black pour with a medium tan head that recedes steadily to a film. Small patches of lacing on the glass. Aroma of chocolate, fruity oak and malt. Full-bodied with flavors of sweet chocolate and butterscotch, oaky vanilla, bourbon and fruit. The finish is sweet with a bourbon and malt aftertaste. Not sure if it is supposed to taste this way but it’s alright.

Corked bomber into snifter glass, opaque black color with thin dark tan head. Aroma notes of heavy caramel/butterscotch, vanilla, dried dark fruits, milk chocolate, marshmallow, whiskey and faint oak. Taste adds more milk chocolate, coffee mocha, molasses, sweet cherries, some wood char, bourbon and earthy bitterness. Heavy-medium body, light-moderate carbonation, soft with sweet roasty-booze finish. Doesn’t taste infected (not a diacetyl bomb) but it is a butterscotch/caramel bomb. Overall a interesting barrel aged RIS.

750 mL bottle poured into a snifter. Black with a nice khaki head, Chunky collar. Smell is insane butterscotch. A little bit is ok, but this is nuts. Some roasted malts and oak behind it, but it really dominates. The butterscotch continues into the flavor. Some chocolate and lots of oak. Sharp flavor in the finish I can’t place. High carbonation. Medium low body. Not much good going on in this beer. I have never tasted that much butterscotch in a beer before.

Pours an opaque black from the cork and cage bomber with fluffy tan brown head that leaves moderate lace. Aroma of sweet vanilla and oak under dark roast and chocolate, with a hint of dark fruity finish. Taste is more toward the bourbon, nice chocolate and vanilla notes with a spicy middle and boozy back end. Bubbly carbonation, impressive for a barrel beer, nice stuff.

750 ml bottle pour. The beer is a thick, oily black with a dark brown head of foam. The aroma has a huge marshmallow and coconut character thats loaded with bourbon and caramel and toffee notes. The taste is a combination of all of those wonderful characteristics in a fairly sweet and boozy masterpiece. This beer is one of the best ive ever had. Thick mouthfeel with a moderate level of carbonation. I wish I could get more of this.

Keg at Beer Run, 5/2/15. Clear dark brown, thin creamy tan head, good retention. Aroma of chocolate, whiskey, vanilla, wood, caramel, raisin. The taste is chocolate, roasted malt, bourbon, vanilla, wood, booze. Thin bodied, boozy, hot, slightly ashy.

750 ml bottle into snifter, bottled on 2/16/2015. Pours fairly pitch black color with a 2 finger dense dark tan head with good retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass, with a good amount of streaming carbonation retaining the head. Aromas of milk chocolate, cocoa, coffee, caramel, toffee, toast, vanilla, butterscotch, coconut, oak, bourbon, light dark fruit, and roast/oaky earthiness. Good aromas with good balance and complexity of dark/roasted malt and bourbon barrel notes; with solid strength. Fairly strong diacetyl, but not overpowering overall to the aroma profile. Taste of big milk chocolate, cocoa, coffee, caramel, toffee, toast, vanilla, butterscotch, coconut, oak, bourbon, light dark fruit, and roast/oaky earthiness. Light-moderate roast bitterness and oak/bourbon spiciness on the finish; with lingering notes of milk chocolate, cocoa, coffee, caramel, toffee, toast, vanilla, butterscotch, coconut, oak, bourbon, light dark fruit, and roast/oaky earthiness on the finish for a while. Nice complexity, robustness, and balance of dark/roasted malt and bourbon barrel flavors; with a good roasted bitterness/sweetness balance and zero cloying flavors after the finish. Medium carbonation and medium-full bodied; with a smooth, moderately creamy, and slightly slick mouthfeel that is good. Alcohol is well hidden with only a small warmth lingering after the finish. Overall this is a good Barrel aged imperial stout, even with the off flavors present. All around good robustness, complexity, and balance of dark/roasted malt and bourbon barrel flavors; and smooth to sip on for the ABV. The diacetyl was definitely noticeable, but not overpowering to the overall balance of the beer. A nicely enjoyable offering.
