Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

Draught sample at CBC 2015. Black with a dense, tanned head. Roasted aroma with chocolate, coffee, caramel, vanilla, wooden notes - Bourbon barrel. Taste is sweet-roasted. Full body, oily texture and a soft carbonation. Finishes lasting roasted with lingering chocolate and bourbon barrel. Excellent Stout.

P: Completely black with a two finger brown head. S: Tobacco, bourbon, wood, leather and hint of alcohol. T: Very dark fruit forward, bourbon, tobacco, a touch of molasses, and black licorice. M: Softly carbonated, its full body but doesnt feel to heavy/thick. O: A little different but my bottle tasted great, balance without hiding the bourbon.

Bottle, ultra black beer, big, sticky oatmeal colored head, awesome lace. Aroma is balsamic vineagar, raisin, cherries, molasses, vanilla, bourbon, cookie dough, dried plums, roasted barley, brown sugar. Taste is molasses, vanilla, brown sugar, cherrie pie filling, salt, coffee, bourbon. This is a bit sweet, but the salty, coffee finish is almost dry. Palate is thick and smooth, carbonation subdued. If this were a bit drier...it could almost be a 5.

750 ml corked and caged bottle, 2015 vintage (bottled 3 months ago). Rating #1900. Aroma consists of dark fruit, raisins, oak, caramel, coconut, chocolate, vanilla. Pours opaque black with a thick tan head that falls after a couple minutes. Taste is licorice, alcohol (not too harsh, but noticeably warming), coffee, roasty and savory along with all aroma descriptors. Really nice.

Tap at CBC15! Nice pitch black beer with a brown head. Aroma has cocoa, roasty malts, plums coffee. Pretty fruity coffee. Slight bourbon. Taste is sweet and fruity, but not very intense. Great balance though. Would probably do better outside this festival! Full body, average carbonation.

Deep brown pour. Nose of fudgey brownie, caramel sauce, light roast malt and coconut/soft bourbon. Flavor is chocolate, mild dark fruit, and light bourbon/toasted coconut/oak. Very smooth with some alcohol. Smelled somewhat better than flavor, but solid.

From a bottle poured at All Tech Fest at Green Flash booth. I’ll have to rerate this at some point because this bottle threw off big vinegar notes with the chocolate. Must have been a bad bottle.
