Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now no further aging required!

bottle. Pours pitch black with small head. Aroma is roasted coffee, chocolate, vanilla. Taste is coffee, roasted, chocolate, nice. Very nice stout.

750 cc from Whole Foods and Capones. Pours hazy dark black with dark brown head. Nose is heavy bourbon, oak, some cacao, blackberry. Tastes strong, bourbony, oaky, with notes of charred dark malt, blackberry, and a hot finish.

Poured from a bomber into a snifter darkest brown black with a tan head that laced nicely. Aroma is vanilla coconut subtle booze. Flavor is better than aroma. Add cocoa and more bourbon. So smooth to the palate.Balanced. Beautiful.

Current bottle also tagged with Cellar 3 - Midnight black pour with a nice tan head. Pour from a 750 mL cork n cage bottle. Wonderful vanilla and toffee nose with a hint of roasted malt. Thick mouthfeel, but not overwhelming. Big bourbon and oak present in the taste. Some stone fruit. Still getting some nice hops blended in with a warm bourbon character. Super yummy.

Aromas of char, coffee, dark chocolate, some tobacco. Black with a mostly lasting dark tan head. Dry, very roasty. Full bodied.

Cellar 3, batch 01 bottled on 2/16/15. Pours a oily black color with a good dark mocha head. Aroma is huge, smelled it before I even meant to, notes of cherry, chocolate, bitter, graham cracker, cocoa powder, molasses, coffee, licorice, coconut, rich caramel, sweet vanilla, very woody, an almost boiled peanut note, and of course the bourbon/whiskey at the end. Taste is smooth dark chocolate, bourbon at the front, graham cracker and vanilla, cherry, coconut, molasses, oak, dry wood, fresh roasted coffee, boiled peanuts, anise. Huge beer, crazy complex, and Im sure it will open more as it warms. Great beer, definitely worth grabbing one or two if you can.

Bottle with the new Cellar 3 branding. Abyssal black. A layer of froth the color of graham crackers and consistency of pancake batter sits atop the stygian liquid. A quick whiff relays notes of cocoa and long-aged whiskey, sure. But give it a swirl and the nose suddenly becomes spicy -- anise, molasses, peppercorns, Fuji apple. It settles into a backdrop of smoky peanuts and charred steak. Sharp whiskey is the first to arrive in the flavor. Beneath that are defined notes of maple syrup, toasted coconut, black licorice, maybe some blackberry. Coffee-bean bitterness. Fizzles out at the finish. Much thinner body than expected, almost watery. Cotton-soft, but just too insubstantial for the style. The boisterous alcohol, however, is kept mezzo-piano. You can hardly notice it. Silva Stout is exactly what Id expect out of a bourbon-aged version of the Double Stout, which I find a little heavy on the anise notes. Worth a try, but not a second.

750 ml bottle from Bevmo. Says "Cellar 3" on the label.Release 2015 batch 01. Awesome brew that is big on the cocoa powder with a touch of whiskey and some red fruits. I can find nothing wrong with this beer. Totally awesome

On tap at Capitol Beer & Tap Room. Pours dark brown with a thick light brown head and a chocolate aroma. There is a full-bodied dark molasses flavor with lots of chocolate and an oak and bourbons n finish.
