Aroma was of light fruits, stronger yeast. Flavor was of bananas yeast had a hop bitterness in the finish. The aroma was apples, bananas, yeast. The flavor was pretty nice, exceeded my expectations for an American tripel, bananas, strong yeast, little hop bite to keep things honest, was a great beer after running a few Franziskaners. Mouthfeel was the greatest knock, pretty light, maybe deceptively light and watery for the style. A nice job by a brewer I didn’t think was gonna produce. JCB (1716), Durham, North Carolina, USA Jan 13, 2007 22 oz bomber. Nice deep blonde to amber body with a reasonable amount of lacing. It’s not a bad approximation of the style, but it has a couple of the more annoying characteristics of American tripels - a big buttery, occasionally syrupy flavor that doesn’t integrate well enough with the spicy, grassy dimensions. Pretty on. Aroma is malty with light notes of toasted grain, toffee; Hoppy with a light note of resin/pine, trace tarragon-like herb; Yeasty with a light note of basement; Light spicy alcohol, tropical fruit, trace green apple peel.<P>
The flavor moderately-to-heavily sweet, lightly bitter with an average-length, lightly sweet, warm finish. Slightly clingy and metallic aftertaste.<P>

Body is hazy dark yellow to light amber, unfiltered.
Aroma is lightly to moderately malty (toasted grain), lightly hoppy (herbs, flowers), lightly yeasty (mold/basement), with notes of popcorn with a hint of butter, gum, pepper, alcohol.
Flavor is moderately to heavily sweet, lightly acidic, lightly bitter.
Finish is lightly to moderately sweet, lightly acidic, moderately bitter, slightly husky.
Medium to full body, syrupy/velvety texture, lively carbonation, moderately alcoholic.
Some possible diacetyl in the nose (popcorn, slightly buttery), but otherwise pretty good. Too sweet in the flavor department, but not so much to kill it. A bit grainy. This needs to be dryer and cleaner and brighter, but it has potential. Cobra (1060), In a van, down by the river, Maryland, USA Dec 27, 2006 22 oz. brown bomber bottle. No freshness date seen. Poured out a hazy, amber color, with a thick tan colored head. Aromas are of Belgian yeast, peppery aromas as well. Flavors are of black pepper, candi sugar, biscuit malt, and sweet cotton candy. Almost icky sweet. Needs fermented at a higher temp for a longer time to make it a true Belgian style ale.
Medium body & mouthfeel. Too thick to be correct to style. Alcohol is present, but not overwhelming. Not the best Tripel I ever had, but not the worst either.
