Josh’s translation of the French description..."Aged in the caves of Kanne, where the exceptional climatic circumstances give it a unique aroma and flavour without equal." In the U.S., the label will read "Grotten Brown Belgian Cave-Aged Ale." ABV of 6.5% or 6.7% depending on bottles.

33 cL bottle at Bar Volo in Toronto, served in a snifter. Pours hazy mahogany with a small tan head. The head fades slowly to a thin cover and leaves a small amount of lace. On the nose, there are aromas of brown sugar, caramel, flowers, resin, banana, apple, nutmeg and clove. The flavour begins fairly sweet with fruit and spice notes but becomes a bit dry towards the finish. The finish is average in duration, with a slight sour note. On the palate, it is medium in body with a milky texture and soft carbonation. Overall, this is a very nice dubbel with a beautiful fruity, floral aroma. Worth another try. 2010-08-21

Big bottle, Red label with "Pierre Celis Signature Selection" autograph, Pours dark red brown. Full, malty, hoppy, tangy bubbles. Dry-ish after taste. Great body for just a 6.5% beer.

Pours brown with a medium head. Aroma is mostly malts with some fruits. Flavor could be described similarly, although it’s not really similar. Might have to revisit and re-rate this some day, but it was good.

2007 Pierre Celis Signature Series bottle Nose is heavy on belgian phenols, hints of ripe apple peel, very feint smell of leather. Taste is extremely smooth, no alcohol harshness at all, hints of cocoa an allspice, light flavors of caramelized belgian candi sugars, nice yeasty character, might be the best Dubbel i have had.

[2856-20100429] 330mL bottle. Fruity yeast aroma with mild cherry hints. Murky, dark brown body with a quick creamy off-white head. Flavour like liquid toast and crusty bread. Medium body finishes lightly. Fluffy feel is intriguing, fine flavour.

Bottled. Pours murkey brown with a moderate tan head. Floaters in the beer. Smells of cabernet grapes, alcohol and earth. Flavors on the palate leave the crisp finish of grapes. It is rather fizzy and fruity. Decent but not great

Bottle, starting at 6C. Mahogany with a coating beige head. Aroma of prunes, poached quince, pears, brown sugar, crystallized ginger, cardamon. Slightly syrupy mouthfeel. Sweetness this cold is moderate but very complex - the above fruits and spices and more. Some brandy too. There’s a surprising dryness even before the finish that is a little woody. As it warmed to a more sane temperature (well, it says 6-10 on the bottle) I expected more of a yeast character to emerge and the sweetness to get a lot bigger, but it didn’t much. Interesting beer that might well improve with age.
