750 ml bottle. Pale golden body with sediments and almost no head. Aroma is fresh apple with a little hint of wood. Flavor is quite mild, dry and acidic apple, rather moderate in barnyard and funk compared with other Basque sidras. Still nice and refreshing, a bit thin body but a great refreshment.

Bottle. Hazy hay yellow liquid with minimal white head. Aroma of red apples, light barnyard, bread wood, lemon and juicy green apple. Taste is very light sweet and light to medium sour with notes of apple skin, juicy green apple and light wood. Medium bodied with low to medium carbonation. Really nice, complex and juicy.

In short: bitter cider.
Pouurs hazy greenish golden with little white head, vanishing. Little lacing. Tart, leathery, wet, apple nose. Light body, high carbonation, crispy texture. Taste is fruity, tart, "volatile acidity" that vanishes fast and leads to a more bitter finish, dry, astrigent. Refreshing and enjoyable.

Bottle at Sidra in Kyoto. Deep gold with orange tints and a quickly vanishing airy head. Tangy apple nose, light yogurt, a touch of butter and vanilla. Tangy apple flavor, a bit cream. Very smooth. Slightly wild taste but still very much apple. Perfect drinkability.

low must
medium apple (fleshy, green, slightly juicy)
medium-low acid (prickly but not vibrant)
medium bitterness (light apple skin astringency)
other: fairly plain and low-key, a bit bland and neutral but has a nice flavor and is well-balanced.

A Mes rate. Bottle at Txikiteo, Barcelona.
Wow, really was not expecting this one. Beautifully tart and almost over-ripe on the nose with a dry, take your breath away sourness. Flavour; woo hoooo this is excellent. Really tart and dry but with a bolo punch sweetness that balances it out beautifully along wiht a chewy wooden note that gives it just the right amount of body to make it not too thin but not sticky enough to harm the drinkability. Amazinglysmooth considering how dry it is and the assertive citrus in the finish fades seamlessly into a lasting cantaloupe aftertaste. A bloody excellent bit of fermentation. These Spanish ciders can vary wildly batch to batch. If all of these are this good, then I wish I could drink this regularly.
