This brew is a collaboration with two daring brewers. Here we have gone all the way and made a true (gruit) herb ale, there are no hops in this ale, only herbs. A beer based totally on historic brewing traditions, incl. the HaandBryggeriet wild yeast. Contains malted barley, wheat malt, rye malt, yeast and herbs.

A clear orange/amber colored beer, with a beige head. It disappears quickly. The aroma is spicy, with some sweet and bitter. There is laurel. The taste is sparkling. There are several spices. The taste is some dry. Some sweet and bitter. The aftertaste is dry with bitter and spicy.

Bottle: Small off white foamy head on top of a light cloudy brown colored beer. Smell malts, caramel, soap, sweets, fruit, orange. Taste is very sweet with a light tingle on the tongue from a soft peppery taste. Delicious fruits, but a lot of malts as well, with hints of yeast, herbs and spices.

Gushing to short-lived foxy-yellow head over red-foxy beer. Faintly spiced, fruity (red fruit) and rootvegetables; sweetish-sourish and a sweet frying oil. Potatoes in sweet oil, liquorice, sticky sweetish rice; only very lightly fruity in the mouth. Herbs & spices, but faint and unrecognizable. Rather light MF, but there is a certain sticky oilyness. Weird!

First Snowfall of the Season tasting in Odense. Copper with a small off-white head. The aroma has lots of herbal complexity with some malt and a hint of smoke (yeasty phenols?). Dry with a flavour of herbs like rosemary and heather, a spicy touch of yeast and a nice and complex finish

Bottle @ Local Tasting, Nov 2010. Pours cloudy reddish with a small creamy off white head. Nose is herbs. Sweet mint and bacon notes. Flavor is smoked and yeasty. A bit thin. Overcarbonated.

No hop presence of course – some sweetness too, alongside the herbal edge and the mild smokiness. Really complex [14112010]

Bottle from De Bierkoning. Copper brown with a fierce, fast disappearing head. Hints of smoke, spices and tart fruit. In the mouth smoked malts take over with some backdrops of fruitiness. A wild and refreshing rauchbier.

Unclear medium amber color with a average, frothy, good lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, toasted, caramel, berry - juniper, spicy sweet spruce - pine needles, light smoke. Flavor is moderate to heavy sweet and moderate bitter with a average to long duration, candy - berry sweet, smoke, spicy ! Body is medium, texture is oily, carbonation is soft. [20101018]

Hazy amber with a medium beige head. Sweet aroma with roasted malt, caramel and manure. Sweet flavor with manure, toasted malt, caramel, manure, juniper berries and smoke.
