Poured deep reddish, burgundy-brown with a thin head. Nose had dark cherry, dark fruits, and some vinous characters. Rich and dense mouthfeel. Some booziness and lots of sweetness. Brown sugar sweetness, vanilla, worty malt, bread-like grains, and baking spices. Strong yeast esters with prunes, cherries, grapes, and raisin notes. Loads of oak and hints of Bourbon Whiskey added a nice touch. Warming and delicious.

On tap at Brouwer’s Big Wood 2012. This was the hit of the festival. Pours deep, dark brown, with a tiny head. Like a blend of Adam and Pannepot -- this takes a Belgian quad and adds depth, complexity, and an American flair. Super full-body, thick and rich. Dark fruit, oak, smoke, leather, vanilla, molasses -- hoo boy, this is delicious. Covers its 12% beautifully. Hope this one makes it into bottles!

On draft at Brouwers. Cloudy dark amber with small beige head. Low carb, med to big mouthfeel. Nose is dark fruits, cocoa, toffee, a little spice, and vinous notes. The barrel aging is very evident. Lacks the yeasty characteristics of a normal Struise Pannepot. I’d assume it uses whatever yeast HOTD usually uses. delicious for sure.love this stuff

On tap at Bailey’s Taproom, pours a beautiful dark mahogany with some beige bubbles. Aroma of raisins, prunes, cinnamon, chocolate and a little liqueur. Flavour is extremely rich and complex, with loads of dark fruits (prunes, raisins), cinnamon, chocolate liqueur and brown sugar. ABV is a bit noticeable but not detracting. Extremely deep and complex, with a perfect amount of sweetness. Wonderful quad.

This very rich, complex and sweet quad is absolutely stellar. It's one of the best quads I have ever had. Hints of molasses, dark rich sugars, raisins and a hint of chocolate make this beer highly drinkable.
