Alcohol nose. Belgian-like in appearance – big frothy, rocky head and a cloudy red-orange color. Sweet candy sugar taste. Yeast also comes through. Nice bitter hop end. Long profile. Heavy and bitter beer. Very interesting and complex. I was looking for a better blend of flavors, though.

Batch#41: Sweet alcohol nose. Dusty brown orange with a fluffy head. Alcohol flavor with hints of barley, brandy, banana and yeast. Short bitter aftertaste. Nice beer, but the kick is missing.

Batch #22 so I’m guessing it’s aged a bit. Barely any head or bubbles of any kind over a hazy dark orange ale. Notes of pear rind, pine & cherrywood. First sip is amazing! Thick and rich with smooth hop bitterness that doesn’t go overboard! Wait a minute...this has absolutely no alcohol in the finish...I finally understand what happens to a big beer after it ages a bit! Even after the piney hops fades from my tongue, a sweet doughy aftertaste lingers. I have enjoyed this beer and highly suggest you get some from this or prior batches.

You should never drink this beer straight out of the bottle. It’s brewed green and needs AT LEAST a year in the bottle before it’s character is expressed. Take a two-year old Fred to a dinner party with wine snobs and see what happens. Your boorish beer habit will have gained new respect.

It had an aroma of yeast and fruit. Very strong, but not overly complex. Very typical barleywine, didnt stand out too much for me.

Very nice looking, pale head. Sharp, hoppy smell, good balance of bittering hops and maltiness in the flavor. Quite smooth and the bitterness doesn’t linger into the aftertaste. Excellent!

My least favorite of the HotD line to date. Light hazy copper color. Almost cloyingly sweet. Honey, sugar cookie flavors. Warming EToH. Give me ADAM anytime over this.

UPDATED: SEP 23, 2004 Batch 56. Head is initially huge, frothy, rocky, off-white, mostly lasting. Body is hazy medium amber, bottle conditioned. Aroma is moderately hoppy (flowers, apricot, grapefruit, resin), moderately malty (cookie), moderately yeasty (dough), with notes of peach, honey, and alcohol. Flavor is heavily sweet, moderately acidic, moderately bitter. Finish is moderately sweet, moderately acidic, heavily bitter. Full body, creamy/velvety texture,
lively carbonation, lightly alcoholic. Re-rating this after having had the Fred From The Wood makes me wish he'd always set aside a portion from each batch and cask-age them, then sell those in bottle form after a year or two. This is a very good beer, but doesn't appeal to me enough to buy it (other than the odd re-rate every year or two). Stinky raw doughy yeast smell keeps the aroma from an 8.
