Draught at the brewpub
Murky amber color, dull hue, compact head. The aroma provides loads of bourbon. Fairly sweet, with a very good malt base, a mellow fruity touch, strong bourbon character and pleasant alcohol warmth. The base beer is the winning element here, the bourbon and peach are a fun experiment.

On tap at Hair of the Dog tasting room, pours a dark ruby red with a tiny ring of off-white head. Aroma of peach and bourbon upfront, both relatively prominent, with some caramel malt sweetness and brown sugar. Flavour is still as bourbon-heavy as regular Bourbon Fred from the Wood, but now with prominent peach flavours (duh!). Lots of barrels, woody notes and bourbon, a bit of vanilla, the peach well-accentuating the barrel character. Excellent stuff, as always from this brewery. A bit cloying in peach sweetness after a while, holding this one back from being a masterpiece. Still, very enjoyable.

tap. big, sweet and sticky as fred tends to be, but with the time in bourbon barrel itís become almost absurdly hot, green and raw. the peach character adds a small bit of fruit flavor (probably doesnít add sweetness but if it does it would be hard to tell given how sweet fred is in the first place), thatís mostly raw and pulpy. thing is, itís entirely too messy and disjointed. unbalanced levels of sweetness, bitterness and acid, with very noticeable alcohol. probably one of the least favorite beers iíve had from hair of the dog.

On tap at the brewery. Pours a bright cloudy orange color with a medium white head. A big fruity huge bourbon nose. The flavor is hot bourbon, woody, sweet and tart peaches, a bit of sugary malts. The overall package here is a sweet malty big barrel aged brew. Excellent. The fruit treatment shines.

Golden with a light orange hue hazy with floaters of peach. There is a strong peach flavoring with the added Fred this makes for an interesting beer. Light Bourbon and oak flavors and strong heat from the high alcohol.

Tap @ Hair of the Dog during their 17th anniversary weekend... Poured an amber/honey tone with lots of floaties (actually chunks of peaches). Aroma was much like regular Fred with hints of vanilla bourbonish tones. Peach really played nicely, a good sweet balance to the booziness. Sherry-like, and a dry, champagne alcohol quality.

On tap at Hair of the Dog new location. Pours out thick like peach juice with peach pulp no head on this one. Aroma was nice tons of sweetness, peach, and vanilla. Taste was more of the sweet peach juice, some bourbon, and thick malts.

On tap at the brewpub in Portland, OR. Pours a cloudy, amber-orange-gold colored body with a thin, creamy and frothy, beige head that dissipates slowly and leaves a moderate lacing. Aroma is bigger bourbon up front with a sweeter caramel and vanilla. A light peach comes out more as this warms with a bit of a bready rye spice, wood, and butterscotch. Flavor is similar. Bigger bourbon and sweet caramels with a good amount of vanilla. A bit more peach on the flavor, but still in the background. Touches of bready rye spice, some wood, and a bit of a nutty butterscotch. Finishes a bit hot with lots of bourbon, vanilla, and sweet caramels. Lengthy aftertaste following a full body and a moderate carbonation. Overall, I loved the regular Fred, but the bourbon is a bit much on this version. Itís still enjoyable with a light peach note, but not my favorite. Despite that, not bad and glad to have tried.

UPDATED: OCT 12, 2014 Sampler at the brewpub. Thick dirty golden color. Too much of everything, particularly booze. Ugh. Boozy wood with tropical fruit hints.

Draft at brewery. Strong nose of peach and vanilla. Moderate tangy flavors. Some floaters in the glass (peach floaters). Lingering fuzzy finish with slight alcohol warming. Sticky sweet finish. Great stuff.
