Commercial Description:
This unfiltered India Pale Ale is brewed using traditional pale ale malts and four hop varieties. Hops are added in six stages, including a large addition of Cascade hops used for ‘dry’ hopping. Dry hopping is responsible for the huge, floral hop aroma that is this ale’s signature. This beer is a pale ale lover’s dream! Hopheads rejoice! On tap at Ham’s in Greenville, NC. Light golden pour with a white head. Moderately hopped aroma. Piney and citrusy hop flavor with some sweetness for balance. A good, but not great, pale ale.

Sampled on draft at the brewpub. Pours a clear copper color with a medium creamy head. Good head retention and lacing. Very pleasant citrus hop aroma. Taste is bitter and resiny citrus hops with some graininess. Faintly sticky texture. Medium bodied.

Draft at WBF Raleigh on 5/2/09. Amber bodied with a short white head. Aroma is citrus, hop oils, light sweet malt, and touches of caramel. Taste is more hops - light pine and citrus - with a solid malt backbone and light caramel. Body is medium and chewy with moderate carbonation. Ends with more citrus notes, hop oils, chewy, biscuity malt, and caramel. Nice!

WBF sample. Pours a translucent gold with a one finger white head. The nose is citrusy, hoppy, mild malty sweetness, grapefruit rind, nice hop aroma. The flavor was citrusy and bitter, nice balance, very sessionable. Dry bitter palate.

Draft at brewpub. On the beer list is stated Champion of the Carolinas 2007. This is an american pale ale. Nice hoppiness, and sweet aroma. Best of the bunch at Hams. My usual when I get the growler filled.

The first time I drank this beer it was about six months ago, and it tasted like it had a dirty old peg leg in it. What I really mean to say is that I did not enjoy it at that time. Tonight; however, it was quite enjoyable. I think the brewer must have eliminated whatever hop it was that was giving it that bitter flavor in favor of something with a much grassier, citrusy flavor. It was very refreshing. The color was still the same golden amber. The head was a bit yellowish and the aroma was of grapefruit and grass. The smell reminded me of my childhood in Florida gathering grapefruits from the yard on a Sunday morning. I had this beer with a Ham’s chicken burger (all organic by the way) and the fresh flavors cut through the greasier flavors quite nicely.

Growler courtesy of elmatador00 as part of the growler swap. Pours a clear amber gold with a moderate yellow-white head that lasted until the very end and left very nice lacing on the glass all the way to the bottom. Pleasant aroma of grapefruit and some light pine. The flavor was well balanced between caramel and bitter grapefruit and light pine. A biscuit flavor emerges at the finish. A very solid and enjoyable APA.
