Commercial Description:
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Beautiful pale garnet color with burnt orange highlights and a thin pink head. Funky nose-tingling lambic sourness in the aroma with light pickled berry fruit notes. Distant sour cherry flavors behind the rollicking lambic yeast profile. Gives a slight impression of sweetness without it actually being there. It’s very dry and crisp and and finishes with a touch of stone fruit bitterness. Light body with an extremely agile mouthfeel. Aggressive, bracing tartness that nearly stings and lasts and lasts.

Smaller Bottle. Pour is cherry red with small pinkish head. Nose is barnyard, sour cherries, band-aid, funk, vinegar, and old socks. yummy. flavor is very similar--mouth puckering goodness. I just love authentic fruit lambics. Shared with some good friends and converted a couple to lambics. Im happy to spread the wealth.

Bottle: Dark red with a thin fizzy pink head. Aroma sharp sourness, cherries, some funky yeasty notes. Flavor, dry sour and musty, cherries, a tartness. I found this to be, a bit too harshly sour for my tastes, I really prefer the softer bite that the 3Fontinen had.

(750ml bottle) Small off-white head that wholly dissipates, atop a hazy red body. Aroma is mild sweet, sour cherry, vinegar, leather, light wood. Taste is quite sour, vinegar, cherry, some cheese. Light sweetness sneaks in there, but the vinegary sourness is what dominates, particularly in the swallow. Acidic light-medium body with light stickiness. Remarkably unremarkable.

Bottle. Reddish in colour with a pinkish head. Wow! Moldy and cherries and sour. Notes of oak. Very nice. Pretty hardcore though. Could feel prickling in my throat as I was finishing it.

Bottle from NachlamSie. Pours a pinkish copper with only a wisp of carbonation at first. The aroma is sour cherries, petting zoo, and a little bit of an herbal tea note. The flavor is extremely sour, almost puckering. Very sharp in the back of the mouth. Mostly grain and sour cherries dominate, and a more robust fruity sweetness becomes detectable as I acclimate to the sourness. Yay lambic.

Bottle. Pours with lively carbonation and a slight cherry hue. Aroma is lunch meat. Taste is vinegar with cherry and a finish similar to Swingin’ Door bbq sauce. Palate spreads the filth. I bet this would be really good on fish and chips.
