Commercial Description:
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Appearance: Set down in front of me a deep, reddish-purple, still body. Gulp. Smell: Heady nose of marinated cherry skins with lesser fruity notes of cranberries and black muscats. Stingy scents of decomposing wood drenched with citric, sour lemon juice and vinegar. Taste: Predominate cherry-like fruitiness, but (gah!) it’s nearly obscured behind the intense, jarring acidity and seemingly sea salt-like qualities. Oh so acetic. Hint of musty, rotting wood. Oh so salty. Thinking back on it is giving me a hankering for some salt-n-vinegar chips. Dry finish laced with acid. Mouthfeel: Medium-light, still body as it’s completely flat carbonationwise. Drinkability: By far the most acidic beverage I believe I’ve ever come across. Fairly tasty, but it’s a real gut-wrencher -- you can literally feel yourself rotting away from the inside due to your newly-formed, bleeding Hanssens Ulcers. So, please, have some TUMS handy!

Pours a reddish purple with a small white head. Aroma is sourness, vinegar, cherries, must, dust. Flavor is sour vinegar, acidic cherry, dust, wood, funk, touch of cough medicine but not too much to interfere with the beer. More sour than expected and quite enjoyable overall.

Pours ruby into a tumbler. Pink head quickly recedes to hug rim. Sour cherry and funk aromas. Dry and tart with cherries and sour lactic funk that lasts through the finish.

750ml Bottle: Aroma of lambic, tart fruit, and a hint of black cherries. Poured deep orange/strawberry-juice/pink in color with a small, white/pink head that lasted throughout as a film on top of the beer. Very hazy. Very slightly sparkling. Flavor is heavily tart and lightly sweet. Tastes of tart black cherries, lambic, and acetic acid. Light to medium body. Tart, mouth-puckering texture is rather average. Average to lively carbonation. Tart, lightly sweet finish lasts.
