Commercial Description:
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Pours a reddish purple with a small white head. Aroma is sourness, vinegar, cherries, must, dust. Flavor is sour vinegar, acidic cherry, dust, wood, funk, touch of cough medicine but not too much to interfere with the beer. More sour than expected and quite enjoyable overall.

Pours ruby into a tumbler. Pink head quickly recedes to hug rim. Sour cherry and funk aromas. Dry and tart with cherries and sour lactic funk that lasts through the finish.

750ml Bottle: Aroma of lambic, tart fruit, and a hint of black cherries. Poured deep orange/strawberry-juice/pink in color with a small, white/pink head that lasted throughout as a film on top of the beer. Very hazy. Very slightly sparkling. Flavor is heavily tart and lightly sweet. Tastes of tart black cherries, lambic, and acetic acid. Light to medium body. Tart, mouth-puckering texture is rather average. Average to lively carbonation. Tart, lightly sweet finish lasts.

Pours a brilliant cherry red color with a fizzy off-white head that dies out quickly from all the acidity. Aroma is sour black cherries and a slight funky note. Flavor is tart cherry and strawberry with some nice acidity. Not too sour. Some funky oaky character on the finish. Medium-thin body, dry, lingering finish.
