Commercial Description:
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Bottle (375ml). My 1100th rating - still two months to my one-year RateBeer anniversary! Poured a beautiful apricot-ruby with virtually no head. Aroma - oh my God that’s wonderful - sour citrus, yeast, wet wool, a hint of burnt rubber, wet aged cedar firewood, *maybe* a hint of cherry - it’s certainly sour. Taste - sour lemon, sour cherry, yeast, white wine vinegar - this is flat yet still somewhat lively, sticky, heavily acidic - almost pleasant and juicy compared to some of the extreme lambics I’ve tried (hello Girardin Black Label) but very drinkable, fruity without being sweet - it seems sort of sweet in the aftertaste, but it’s all about the juicy funk and sourness when you’re drinking it. Pleasant.

From the Bottle at the Falling Rock Tap House, Denver 26/09/2009 Sour fruit aroma. Amber coloured fruity sour and woody with a crisp and slightly dry malt finish.

375ml bottle. Pours red with small head that disappears fast. Nose is tart, quite vinous and sour cherries. A bit too vinous for my taste (I can’t stand Rodenbach). Taste is vinous and sour. It gets much less vinous at the end. Start would be 3.4, end would be 3.7. Intensely sour, mouth puckering. I’m a bit disappointed about this one. Not for me.

(bottle - corked & caged 750 ml) Deep red pour with a slightly pink head. Aroma is incredibly sour and tart with lots of cherry notes. Good and funky. Flavor is sour and earthy at the start. Lots of fruity acidic notes and a lot of sour funk. Finishes with a tart and tangy cherry aftertaste. Really nice and really sour.

Oh man this stuff looks like happiness in a glass! I wish I had the wherewithal to age some of these for decades. It’s deep red with white fizzy foam. The aroma is spritzy, fruitily acidic, a little bit of chalk, fresh. The flavor is lightly sweet, acidic yet calming, it’s like the Platonic form of what a cold tart cherry should taste like, the finish reminds me of cherry skins. There’s an undertone of horsey funk too. Mouthfeel is light and fizzy. This is delightful, just the beer I wanted today.

Red pour. Pink head. sour cherries, vinegar, leather and citrus. Flavor is sour and oaky with some light yeastiness. Good stuff!

(375 ml bottle from 1828 Vintage House) Pours cloudy reddish with two fingers of pink head. Aroma of sour cherries and yeast. Mouthfeel fairly soft, light and smooth. Light carbonation. Flavor of sour and tart cherries, leaving lingering sourness and some fizziness on the tongue.

Bottle pours a hazy ruby red with a small white head. Aroma is leather, plastic, cherries, bread, hay. Flavor is very tart cherry acidity. Mouthfeel is nice and dry. Great Beer! Very refreshing!

Split by Shyam. Beautiful nose of nasty funk, feet, orange peel, wood, cherry. Color is a nice bloody ruby. Flavor is a nice oak character with cherry, yeast, tartness, apple, vanilla and esters. Really something.
