Commercial Description:
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Tart sour aroma, hint of cherry pit. Flavor is harsh and sour at first, hints of butyric acid at first with a fairly strong acetic presence as well. As warms it melds and the acidity fades, touch of sweetness (saccharine?) in the finish.

375 ml bottle, corked champagne style, at Plan B, Copenhagen. Red / "pinkish" / brown colour, moderate pale pink head. Sour cherry and funky barnyard aroma. Flavour is very sour cherries and red wine vinegar.

The aroma is sweet cherries with notes of wood. The color is a clear red-brown and it has next to no head. The flavor is very acidic with slight notes of cherries, metal, and wood. The end is very acidic and the mouthfeel is very dry.

Bottle: Reddish amber w/ a lasting whitish head. Sour, slightly smokey & cherry aroma. Horsey and musty, as well as a little catty. Malt character very low in this one. Light cherry & sour flavor. Well balanced, but musty & woody. Light sugar sweetness under sourness; dry sour finish w/ a musty malt flavored aftertaste. Very dry m/f, astringency from acidic sourness, lighter body & highly carbonated. Too sour for my liking but some sugary sweetness balances fairly well. Still don’t like lambics all that much!

Hazy brown/red color with a light carbonation and some lacing and head. The aroma is spicy with lots of musky barnyard smells and pepperoni. The flavor has only a distant fruity note with more of the tart, vinous qualities coming up front. Finishes balanced and fairly refreshing. A good traditional fruit lambic, IMO better than Lindeman’s oversweet examples. Gueuze plus a little fruit.

Soft murky red appearance. Aroma is typical, lots of sour tones, and only a slight cherry presence. Taste is average, mouth feel is unexpectedly thin, and along with the hard-to-detect cherry flavors, this one is just sour and not much else. OK.

Poured a hazy, reddish amber color that left no head or lacing on the glass. Aroma of leather, some citrus fruits, oak, horseblanket, cork, caramel malt, and a fair amount of phenols. Taste of tart green apple, malty, caramel sweetness, and an acidic, sour cherry finish. Moderate carbonation.

Bottle (375ml). I wish I would’ve noted the vintage on this, it’s at least a year or two old but I honestly have no idea, it could be more. Pours a slightly hazy amber-red with practically no head. Aroma’s funky along with wood, sour cherry and citrus. Sour flavour of lemons, tart fruit, yeast, wood and white wine. A bit of sweetness hidden in there. Dry finish with what I swear tastes like pepper. Flat mouthfeel yet also acidic, medium bodied. This is one sour, funky mo-fo, it’s hurting my teeth! Still, it’s a pretty good one.
