Our newest saison is a Collaboration with our Chef, Chris McCoy and inspired by the flavors of Southeast Asia. Brewed with coriander, lemongrass, Thai basil, kumquats and blood oranges and fermented with yeast from one of Belgium’s most respected farmhouse breweries, this complex and interesting brew is great on its own and is a perfect compliment to a diverse array of foods.

Draft at Haymarket. Pours a brilliant pale gold with a dissipating white head. Nose is fruity and spicy but I don’t get the depth expected with the adjunct additions. Some pilsner malt notes, quite clean with a good yeast profile. On tasting, smooth and soft, tending towards citrus. Misses that saison profile, imo. Belgian pale ale, sure. Characterful overall and balanced.

Tap at Haymarket pub and brewery, Chicago - 04/11/12. Clear pale golden with a thin white head than soon clears to the edge. Farmy horsey nose with citrus tones, spice and a bit of piss. Taste is slightly medicinal, citrus tones, grassy, herbs, farmyard, fruity, touch of mint. Medium bodied with fine carbonation leading to a fruity finish.

Draft on tap at the brewpub (Chicago, IL). Pours a nicely hazed golden straw pour. Nice sunny glow on the edges and bottom, touch of darkness into the middle. Aromas are mellow to medium lemongrass, touch of citrus, florals. Dry and grassy, gentle lemon, and some mellow growing spicy yeast elements. Kiss of coriander, spice. Initial is lighter end of medium bodied, some jumpy lemon and orange, gentle spiceyaroma, earthy and dry. Kiss of pepper, spicy yeast. Growing lemon and orange, gentle florals. Richer kumquat and orange elements showing into the middle. A bit tart and orange citrusy elements burst into the iddle, kiss of basil. Backend shows fruity esters, apple, touches of tart lemon, citrus, oranges. Some grass,s pice, gentle malty bread and dough sweetness. Very nice, good synergy, richer flavors. A complex experience I found well put together, but going in thought had potential to be quiet messy. Extra point on the backend of a cohesive experience with all those elements thrown together.
