3.6 AROMA 6/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20
Taster @ Haymarket. Pale yellow, a little cloudy, under a white parfait foam. Sweet smell with a little yeast; not a very strong ale smell, considering. Taste is pretty malty and a little sweet. Hops are working well with this beer, I can play a taste over every part of my tongue and feel it sublimate into carbon dioxide. My first Haymarket beer (but I didn’t have the info to enter it), and it’s a very good impression.

3.5 AROMA 7/10 APPEARANCE 3/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20
Haymarket’s pairing beer at this year’s CBS Chicagoland Brewpub Shootout, dispensed to my fest glass displaying a hazed golden hue, with a modest layer of white head froth, and light, wavy cling to the lacing. The nose & taste where citrusy, with additional grapefruit overpowering a good deal of the sweetness & spicy phenols usually present in the style. Quite dry as noted in many Trappist versions. Medium bodied, with lively carbonation, and well incorporated alcohol. Paired well with savory grits, braised pork belly, fried pig ear & grapefruit slaw.

3.1 AROMA 6/10 APPEARANCE 3/5 TASTE 6/10 PALATE 3/5 OVERALL 13/20
Location: Draft at the brewpub, 5/27/14
Aroma: Nose of fruit, yeast, and spice, some banana as well
Appearance: Pours a hazy golden color with an average sized head
Flavor: The taste is much the same, somewhat sweet, spice, and yeast
Palate: Medium body, with an okay mouthfeel
Overall, this was a solid one, but not a favorite for me. It is at least worth trying.

3.5 AROMA 7/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 15/20
Sample at the brewpub. This beer is slightly hazy golden color with a medium bone white head that dissipates steadily to an outer ring. Short strings of lacing on the glass. Aroma of yeast, malt and floral hops. Medium to full body with flavors of bready malt, yeast and grassy hops. The finish is fruity up front with an herbal yeast aftertaste. Decent overall.
