COMMERCIAL DESCRIPTION
Our ode to Oscar Neebe, yeast saleman, friend of the brewer and one of the three to survive the trial of the "Haymarket Eight". A straw colored Belgian ale dry-hopped with Amarillo hops. A great session ale!

On tap at the brewpub. Pours a cloudy pale yellow with a white head that dissipates nearly completely. Aroma is full of tropical fruit and citrus with some backing flora and sweet grain. Flavor begins with grapefruit that mellows into citrus and is backed by light grain.

Cloudy pale yellow with good, creamy, white head / Light, crisp, nose of lemon and funk / Light body, acidic and crisp, a hint watery but with fine balance and excellent dry, bitter, finish / Elegant flavors of weed, lemon, coriander, grass, and brett / A lovely, light, complex, summer beer.

Tap sample. Poured hazy golden color with medium off-white frothy head that mostly lasted with good lacing. Medium to heavy earthy hop and yeast aroma. Medium body with a sticky texture and soft carbonation. Medium bittersweet flavor with a medium bittersweet finish of moderate duration. Solid brew.

[Tap] Sampler at the brewpub. Pours a dull yellow color with a slight haze to it. Firm foam head was long lasting. Initial aroma of yeast esters, wheat malt and mild clove. The taste is of green apples, pear, lemongrass and light malts. Not particularly well balanced, but still pretty dry and sessionable. This would be better with a slight recipe tweek.

On tap at the brewpub. Pours a clouded, golden-orange colored body with an inch thick, dense and frothy, off-white head that dissipates slowly and leaves a nice lacing. Aroma is banana with a good amount of citrus and Belgian yeast. Fairly lemony with a light wheat tartness as well. Flavor is similar. Banana and lemony citrus up front with a light wheat. Some yeast and a light tartness in the middle before the hops kick up towards the end and dry this out completely with a moderate, earthy and piney bitterness along with a slightly tart lemon, peppery yeast, and Belgian yeast. Lengthy aftertaste following a medium body and carbonation. Overall, a solid Belgian pale ale. Nice flavor and well hopped with a distinct Belgian yeast. Easy drinking and very flavorful for being only 4.5% ABV.

Had this at the brewpub in Chicago, Illinois. A nice, sessionable beer, well balanced with some toastiness later on, and a mellow finish. Salut!

UPDATED: JUL 23, 2013 On tap at the brewpub. Belgian pale yeasty nose. Murky yellow body with a white head. Dirty belgiany flavors. Thin body. Dry. Kinda messy. Bitter finish. Like the other Belgian ones I’ve had here, I think the yeast just needs a little more time to clean up and turn into a simpler more palatable beer. 6/3/6/3/12

On tap at Belgian fest 2012. Hazed yellow. Light lemon crisp. Bitter tasty effervescent. 7/3/7/4/15

On tap the pub...A super murky neon straw, strangely reminds me of a glass of yeast. A couple fingers of white head, good lacing...Yeast and lots of it, yeast, and lemons. Not bad, needs to be a little sweeter...The taste starts off very yeasty, but brings about some nice sweet notes.. The finish is chalky and surprisingly alcoholic, which is a big detractor. Besides the finish this is pretty easy to drink. I’d have it again.
