Flavors of yeast, sweet malt, phenolics and fruity esters. Noticed a bit of fusels as well. Moderate amount of spice from the yeast or additional spicing as well. Pleasant, fruity aroma that I can’t quite place... maybe some pear and almond liquer. Reminiscent of the aroma in any Italian pastry shop on Mulberry Street, NYC. Well-balanced flavor. Lightly sweet and breadsy. Nutty, spicy and fruity. Well-hidden alcohol. Medium-bodied and creamy with lively carbonation. Good stuff. RblWthACoz (959), Brooklyn, New York, USA Sep 28, 2007 Pours a clear gold. Nose is of doughy yeast.Taste is sweet and yeasty and that dough shines through quite a bit here too. That is the main feature here - dough. It reminds me of when my mother cooked bread or pizza and I tried the dough and thought...hmmm...that aint too tasty. I guess at the time I wanted something sweeter, like cookie dough. But for now this kind of dough is just fine. Feel is slick on the liquid and low on the bubble. Overall a pretty good experience here. Not the greatest tripel ever as I feel the dough is a bit too much for me personally, though it doesn’t ruin it by any means.
