We recently changed this recipe to drop the smoked malt component to 5% from 8%, and like it even better than the last version. We think weíre back in real Schwarzbier territory now, especially after reading more about the dark beers of old Eastern Europe. The beerís aroma is malty/espresso, with a hint of smoke. On the palate, malt, chocolate and espresso flavors take center stage, along with a hint of smoke. The sweet smokiness just offsets the more bitter/roasty notes, producing a smooth, rich brew. The hops provide balance, but virtually nothing to the aroma. This is the perfect beer to serve with a barbecued steak or tri-tip. Itís also excellent with just about any chocolate dessert! (1.013 BG, 4.6%, 30 IBU, 28 SRM)

Bomber. Pours like a stout, though some light just passes through at the right angle. Really pretty in the glass. Delicate carb around the edges. Roasty nose with hints of coffee, dark chocolate, smoke. Drinks much the same, I get a slight touch of hops somewhere in there. Light to medium body. Gets even better as it warms.

Bottle from Capitol Beer & Tap Room. Pours dark brown with a thick beige head and a chocolate and treacle aroma. There is a smoky chocolate and dark molasses flavor with a slightly bitter finish.

Bottle at home picked up at Belmont Station in Portland. Pour is deep brown with a big tan head and great lacing. Big cocoa, roasty, light marshmallows, toasted bread, caramel, grainy, and brown sugar in the aroma. Taste is roasted dark chocolate, caramelized sugars, husky, somewhat bready, brown sugar, and doughy. Medium body with soft carbonation. One of the better Schwarzbiers Iíve had.

Bottle. Head is initially average sized, frothy, light brown, mostly lasting. Body is dark brown. Aroma is lightly to moderately malty (roasted grain, burnt popcorn, cocoa powder), lightly hoppy (herbs). Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, moderately bitter, slightly husky. Light to medium body, watery texture, lively carbonation. Mild nose thatís a bit popcorny but otherwise nicely roasted. Decent balance in the mouth, but a bit vegetal/husky. Good potential here, but rough around the edges.

22 oz bottle. Dark brown with beige froth. Nose is coffee bean, black walnut, caramel and hay. Silky medium body with a clean, crisp tang. Taste is mocha, black licorice and quinine with a hint of sweetness. Simple beer, perfect execution. Another "best in style" from these folks.

Bottle. Dark brown/black beer with a tan head. Light smoke and light caramel aroma. Caramel and light roast flavor with light smoke, light citrus, and light chocolate. Medium bodied. Caramel and light roast lingers with light citrus and light coffee.

On tap at Mikkeller Bar. It pours black with a one finger, tight khaki head. The aroma is roasted and dry with chocolate, coffee and a hint of Dr. Pepper. The flavor is velvety and full bodied with a bright minty hop character and cocoa, coffee and subtle Dr. Pepper cherry spice. Lightly minty florals and chocolate in the finish. A spectacular beer.

22oz bottle. No date. I assume fresh, because it was from the first round of distribution to SF. Served chilled and let come up in temp. Guinness glass. Deep, dark brown pour, with a thin khaki head. Focused aromas of chocolate, roasted nuts and roasted grain, with a hint of sweet, smoky, charr. Mouthfeel is smooth, creamy, full and round, with a medium-light lager weight. Very friendly, with a very slight, dusty bitterness. Flavors of dark chocolate, subtle raisins, mild sweet smoke, ash and roasted grain. Great lingering flavors of dark chocolate, roasted grain and mildly sweet smoke. Overall, wonderful balance and mouthfeel, with good balanced flavors of mainly chocolate and sweet smoke. While I don't have much experience with Schwarz style lagers, this was very enjoyable. Light smoke is very well integrated. While it drinks fine chilled, I enjoyed it more near 60-65 degrees. I can only imagine this will go well with the right foods. --- tasted while on a long journey to understand the world around me...
