COMMERCIAL DESCRIPTION
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Black with ruby edges...off white head...a little lacing
Aroma of sweet dark fruits...bit of roasted malt...slight smoke
Taste of sweet dark fruits...bit of roasted malt....dark sugars...hint of chocolate....hint of wood...very slight spice probably from the hops....bit of port.....gentle smooth taste
Palate - soft to medium carb....quite sweet...very smooth. Finish as main flavour...smooth....bit more of that woody smoke comes through ...bit of warming alcohol...I’m getting a bit of liquorice too
Overall - this is a well made smooth gentle tasting ale made from unusual ingredients that works. Give it a go!

33cl bottle. Black beer with a creamy but quickly diminishes tan head. Aroma has toasty malts notes, licorice, sweet. Flavour is slightly sweet at the beginning, toasted malts and licorice traces are present. The final is slightly bittery. Carbonation is medium. Body is medium to high.

Darkest brown with a slight amber hue, thin mocha head. Rich dark fruit aroma. Sweet dried fruit and roasted malt taste. Low hopped and softly carbed. Mild acidic finish. LF (Lagerboy Friendly)

Pours very dark brown, near black even. Very fizzy - big tan head. Aroma is chocolate and...dishsoap. At least that’s how I’d describe it. It’s pleasant enough to drink though. I opens a bit strange and vegetal - a bit like I’d imagine kelp would taste like. Maybe that’s the bog myrtle. Later in the sip it moves to a more conventional chocolate/roasty, porter-esque thing that is really quite good. Didn’t really get berries unless that was the soap.

Bottle at World of Beer (Land O Lakes). Pours a nearly black color with a small tank head. Aroma is pretty sweet (dried prunes, tobacco). Flavor is actually more like a porter with some nice roasty malt and chocolate/coffee notes in the finish.

UPDATED: FEB 10, 2012 12 oz pours black with a tan head. Aroma of Chocolate, yeast, and a bit of black malt with mild sweetness and a charred hint of roasted grain, mixed with fresh elderberries and grassy, slightly floral hops. Taste of Chocolate and roasted malt with notes of coffee, cinder toffee, and a lingering toasted grain undertone with some oat sweetness.

Bottle 33cl, a dark beer with huge creamy head, nose is on malt, caramel and spices. Aroma is on creamy caramel, malt, chocolate, toasted, tobacco notes, medium sweet, licorice and dry fruit, very pleasant. Some round vanilla body and oak notes, I did not notice much elderberry notes.
