Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Pours dark brown with mocha head. Aroma of dark berries, plums, raisin, strawberry, some roasted barley notes. Flavor is slightly sweet with notes of berries and some coffee and roasted notes. Metallic notes take away from the flavor. Some yeast also present. Flavor that is there is pretty good, but there just isn’t all that much of it. Creamy, slightly sticky palate.

Bottle. Sample at Ölfrämjandet meeting at Haket, Gothenburg. Black color with a small pale brown head. Aroma: Roasted malt, coffee, fruit, berries, a bit earthy. Flavor: Berries, roasted malt, coffee, licorice, wood. Porter like.

Another under rated beer from Heather ales. Pours a rich black color with tan head. Smells like a rich baltic porter, dark fruit, chocolate and coffee with a slight berry scent. Bid coffeeish chocolate flavors with a pleasant berry note. Smoke and toffee with a touch of cocoa. Finishes like smokey licorice. I just wish the body was more substantial, however this definately has a place in beerdom.

Bottle. Dark, luscious malt aroma, deep chocolate in with some burnt black malt and earthy dark caramel. Lightly roasted oats with nice (but still underwhelming) berry. Pitch pour with a rocky medium-brown head. Beautiful roasty notes, and some nice porterish darkness, but the slightly-sour berry overtones are a little too high in the mix. Love the elderberry taste - and it’s pretty true to nature when checked against jam - though it might not stand out in a blind. Firmly established with volume. Medium-full body with a thickly malty, smooth feel. Light herbal spicing and a dry, leafy mocha quality that reminds me of Dark Horse’s Special Black Beer. Underrated by our top raters!

Bottle dated Apr 2009. Almost pure black color, but with perhaps a touch of dark purple. The head is dense beige...it reminds me of a Nitro can head. Not much aroma. Medium-to-full body, a bit more fizz than it claims. Kind of like a stout with a splash of red wine. Roasted chocolate malts and tannin-like astringency. But there’s also some berries, though it isn’t very sweet. Nice ale, but didn’t cure my sciatica.

Bottle: Very nice dark pour with a light brown head that very quickly disappeared. Can taste dark choclate in the brew a very nice mixture nothing overpowering.

Pours black with a minor head. mildly sour aroma. Flavor is sour with a moderate mouth feel. Somewhat minty in a weird way. Definitely interesting and not all that bad.

Bottle 33 cl. Pours a pitch black with a small tan head and a delicious aroma of fresh picked berries, coffee, maple syrup and roastiness. The flavor isn’t that good though, it starts like a berry juice, fresh and slightly sweet and then gets more like a stout, roasty and dark coffe-like. A weird combination and not something I would buy again anytime soon. Though the smell is brilliant.
