Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Appearance: Pours a black body with brown edges and a bubbly, beige head. Smell: Aroma of roasted barley and elderberries (which come across as a smokey wild grape). Notes of chocolate as well as molasses. Taste: Chocolatey, roasted barley flavor with a hint of smoke and, of course, a firm elderberry fruit taste and sweetness - like a blackberry-grape mix. Dash of spice. Light sourness to the roasty finish. Mouthfeel: Medium-thin body. Medium carbonation. Drinkability: Interesting and certainly fine enough for a single bottle, but not something I’d want to make a habit of.

Pours a transparent dark mahogany with ruby hues and a thin ring of spotty off-white head. Aroma of dark fruits and some mild peat and caramel malt. Starts well-carbonated and fairly full with some lightly smoky and fruity tartness before a drier earthy finish. An interesting and fairly complex brew.

Pours reddish black with average tan head. Aroma of dark fruit and molasses. Flavor to match, but adds a bit of caramel malt and seems to fall short. No "wow" factor.

Sampled at 2007 Brewnosers’ Christmas Gathering. Dark brown with a fizzy tan head. Aroma of blackstrap molasses, acetone, light chocolate and fruit. Acetone and blackstrap molasses featured highly in the flavour as well, with the acetone taking too much away from what otherwise would appear to be an interesting beer underneath. Light bodied and dry.

330 ml bottle from a historic ales of scotland giftpack. pours dark brown with red edges and an average tan head. aromas of dark fruits, malts, sweet caramelish vanilla. complex flavours that show potential but to thin to be great. a good beer and by far the best of the giftpack.

[bottle rated 1.4.08] Black pour with medium fluffy tan head, cant ask for much more visually in this style. Aroma of dried fruit and licorice. First taste is heavy of smoked malt and coffee, followed by light vanilla. Latter on licorice/raisins come out hinting to the cask. Chocolate/fruit aftertaste. Light flavors and not in great proportion, but very complex. Body is a little oily yet thin, carbonation is big bubbles but not many of them. 7.4.8.3.15 [bottle rated 7.16.09] 7.4.7.4.14 Very tasty, creamy, oily, chocolate, smooth, vanilla, super spicy, coffee, roast, bitter, very herbal. Not sure what I’m talking about in my last rating. A really nice beer.

Has a brown, very dark color, and a very minimal and rapid head. The aroma is deep, good, is like to be in forest of pines. The flavor is very complex, there is berries and sweet caramel, also something of sweet malt. There is bitter chocolate, and spices a with a slight and piquant aftertaste. A very good beer. Lament that is a summer, since with a bit more of cold would have been excellent.

Bottle. Pale brown fine head. Almost totally black. A kind of sweet aroma. A strong dark fruitiness and roasted barley. A bit special. Not far from a good norwegian christmas beer. Strong flavour, heavy roasted maltiness. Medium sweet. A tad fruity too. Medium bitter finish. Pleasant carbonation. I like this. (Tromsø, 06.11.07)
