Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture, soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Absolutely gorgeous pour. Pitch black with a thick tan head that leaves heavy lacing. Deep malty aroma with malt, chocolate, and a hint of berries. Thick, creamy mouthfeel, much like a stout. Flavors of roasted malt, chocolate, and hints of coffee and berries. Very well balanced and easy to drink.

Not bad, not great. I don’t notice anything special about this until it got a bit warmer. I expected something from the Elderberry and when too cold there wasn’t anything. Pretty similar to the Shiner bohemian black lager without coming all the way from Scotland.

Pours black with a respectable head that does not last. Earthy aroma of roasted malt. Moderate carbonation with a soild full-bodied mouth feel. Taste is very stout-like; coffee, nuts, roasted malt, plus a fruitiness with touches of plum and cherry. Very drinkable and enjoyable. Great beer.

Bottle pours black with a thin beige head. Aroma is roasted malt, chocolate, coffee, and a bit of fruit. Flavor is light roast, and coffee, definite fruity-berry flavor (elderberry?) and a lightly bitter finish.

Ebulum is a (barely) black ale with a red-brown hue. It has a splotchy, dense, light brown head that has great retention and leaves thick lacing on the glass. It has a very strong roasted aroma with notes of coffee and chocolate. It’s medium bodied and smooth with a light, clean finish that’s a bit acidic. It tastes quite roasty and there’s a sharp, green bitterness that plays off that well. It’s mostly a coffee flavor, with notes of dark fruit and a dry red wine flavor at the finish. It’s unique and tasty.
