Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Another meaty brew from Heather Ales. Nose is sharp and the taste is almost medicinal. Even so, it was a pleasure to drink. There are most likely no other beers that taste like this, so enjoy it!

Bottle. "Light" black color with a small to medium head. Aroma of sweet, dark fruits, molasses and chocolate. Nice.
It all falls apart is the tasting. Unidentified sourness/astringency nearly ruins any cohesive flavors. It’s still a very interesting commercial story, though.

12oz bottle from Ron’s in Farmington. Rather opaque black-red body with a very thin light tan head. Aroma is dominated by nuttiness and fruitiness with a firm bit of roastiness in the background. Tastes like berries and chocolate more than anything. A slight nuttiness is in the background. as well as a smoky quality. Lots of stuff in this flavor. Medium body. A tasty complex beer, that’s for sure. Not sure I’d ever be drawn to this one again, but definitely a very tasty solid ale.

black body, thick foamy tall dark tan head, a little red-clayish colored. roasted malt aroma, baking chocolate, and some dark berries in the background. light carbonation, body is a bit thin. flavor is roasted malt, a bit of baking chocolate that goes light like cocoa powder, then a drier and grassier finish. actually it is more like a dry red wine. not astringent but definately some tannin in the aftertaste. interesting and original.

The elderberries gave this a sour finish. Pronounced smoky, toasty, roasted flavor. Tannin like taste of red wine.

330 ml bottle from Plaza Liquor - Pours a dark brown color with a one finger thick tan head. Light lacing. Has a sweet toasted malt aroma with some light underlying esters. Flavor is light roasted malt. Palate is a little dry. Light to medium body. A pretty good beer.

(Bottle) Pours a dark brown color with little head. Aroma of roasted malts. Taste is similar, with some of the flavors more burnt than roasted. Only a slight hint of any berry in this one; otherwise very roasty, with caramels, cocoa, and smoke. Nice creamy mouthfeel, with a full body and average carbonation. An interesting, enjoyable beer.

Deep brown with a miniscule head. Bit of a cardamon nose. Thin on the tongue with subtle coriander and molasses. Very muted fruit. A rich porter with some smokiness. Velvety on the palate.
