Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

The bigger, darker and downright fatter brother of the Fraoch. This one was a pleasure to drink, had aggression and subtlety all bagged into one tasty little number. Poured a deep, dark, brownish black with a well retained, beautifully presented creamy tan head that left some firm lacing. Smoky, molasses, liquorice, burnt grain and cured fish aroma with a touch of fresh sea air. Palate is creamy, almost silky and quite full for what I guess is a filtered ale. Deep, smoky, peaty malts and burnt fruit dominate the palate with just a touch of tangy, dark elderberries. Fills out well with liquorice and molasses finishing it off and lingering long in the mouth with a feint note of brine. Fairly simple flavour-wise but it does feel so good in the mouth. Best before June 2005. Pours black into a shaker. Vigorous pour produces mocha milkshake head. Head quickly recedes, but micro head creates cloudlike patterns on the surface throughout the experience. Roasted caramel and chocolate notes. Not quite flat -- silky and dry. Smoky chocolate palate front to back.

Bottle, brought by a friend from England. Black color, tan to beige "cafe latte" head; beautiful, but non-lasting, head. Soft gentle a bit chocolate and burnt scent, but more towards the chocolate bit. Warming up the beer grows a fresh fruity scent. Soft but a bit thin mouthfeel. Low bitterness. Small chocolate taste mixed with alcohol, mellow burnt aftertaste. Can’t taste the elderberry and the entire beer is a bit too weak for my taste.

33 cL Bottle. Pours mahogany coffee dark, with a fringe of sienna and a rim of tan. Aroma glows of rich fruits, fresh squeeze lime juice and a drop of tannined tequila. Some mild marshy character in a peaty way. Complex and bright. Flavor falls short on the fame line, with heavy roasted soapy alcohol. Palate bites with dryness and salted roast grain. Unbalanced.

[Bottled] Dark (almost black) brown colour, very little head. Aroma is black currant, liquorice and "Läkerol". Rough cough drop flavour.

Dark pour with a long lasting tan head and good lacing. Aroma of hops, coffee and berry. Good touch of bitterness with the strong chocolate/coffee flavors. Nice hoppy aftertaste without going too far. Great Stuff!

Poured a dark black with a thick, almost nitrogen poured, tan head. Aroma has lots of chocolate and fruit that seems like a mix between blackberries and red wine grapes. Flavor is very rich and memorable, a smooth bittersweet chocolate blended with what I asume is eldeberries, though my inexperience with them leads me to descibe as blackberries and red wine grapes. That fruit flavor is rather subtle, and sneaks up behind the creamy chocolate flavor. Mouthfeel is very full bodied but the beer is relatively dry. I could drink quite a lot of these.

Had no idea what to expect but, guess, what, this beer rocked. Deep roasty, caramel flavor with an awesome head on the pour. I still don’t know what an Elderberry is, but apparently they make good beers.
