Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottle: Really dark black with a tan head. Berry and fruit aroma. Sweet soft chocolate flavour with berrie notes. Medium bodied, nice.

12 oz bottle. 1 of 4 from a gift pack. Dark cola color with burgundy tinges. Dirty tan yeasty head settles to a film with some lacing. Smells of brown bread, molasses and chocolate; licorice and cigar. Tastes like a basic oatmeal stout with hints of chocolate raspberries. Medium body with alcohol coming through in the end.

Sour fruit aroma. Black with tan head. Has a roasty almost smokey flavor with fruit behind that. I descent beer. Probably wouldnt get it again.

Black, dark, low carbonation. Berries and chocolate aroma. Starts with coffee then quickly becoming sweet and then the berry kicks in. Wouldn’t buy again, considering the price. The beery to berry ratio isn’t right.

330ml brown bottle. Freshness date notched 12 months later. Pours an opaque dark brown, with thick tan head. A rich, grape-like aroma and big berry flavor. Medium-bodied, with an early hop bitterness and dry finish.

Cask Handpump at the Beer House, Manchester 18/11/2001 Dark coloured and smooth on the palate. Fruity with a slightly bitter hop finish.

Bottled. Deep dark brown body with a purple hue, little or no head. Rich roasty, chocolate flavours, balanced by a mildly acidic fruity tone, all held together with a light, refreshing body that would be recognisable to lovers of Porter. This is a lovely drop and real surprise to be pulling out of the hat on a Tuesday night.

Assé spéciale cette bière, j’aime bien ce goût de fruit. Là si je peux en trouver du "elderberry".
