Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

I poured this rather abruptly, so head was shortlived and rocky. But it had a nice kind of shading in the head with a reddish brown on the bottom fading into a lighter tan on top. Body is a dark plum/ black. Nose of roasted coffee and chocolate. Flavor is sweet upfront and mildly dry in the finish. A very lovely chocolate flavor, with coffee, and maybe some dark fruit (grapes), nothing overpowering and very drinkable. Awesome.

Pours deep red/black with a roasty malty berryish aroma. Slightly licouricey and stout like flavour with a dry finish.

Medium brown foam with blackberry coloring. Pungent berry nose. Roasty fruity flavor with a slightly bitter finish. I like this offering 2nd to Kelpie from these guys.

Aroma was more like a brandy with fermantaion and somewhat fruity. Black bpdy not much of a tan head. Flavor had a pale fruity and mild sweetness to it. Smooth on the palate. Left a berry aftertaste.

Deep black color, with a tan-colored head, with a fruity note of elderberry, roasted malt, and a chocolatey aroma follows through on a medium- bodied palate with a nice bitter-chocolatey charecter, with hint of fruitiness, roasted malt, coffee accent, licorice note, roasted coffee grains, leading towards a dry roastiness finish

Chocolatey mahoganey color, soapy thin tan head. Chocolatey wet dog aroma. Better flavor… chocolatey blackberry stuff with coffee.

Very dark with a thin skiff and bubbles around the edges. Mild berry over malt aroma. Nice dusty malt and berry mix in the flavour. Both combine in a lasting finish. A trace of hop bitterness. Higher alcohol for a fruit beer although well hidden.

Deep ruby, almost black with some tannish head that recedes to a ring. Smells of sourness and light grapes, with some coffee notes. Flavor is initially tart and light fruitiness. Flavor then turns to a somewhat dry chocolate with berries and coffee flavor.The oatmeal does a nice job in smoothing out some of the initial tartness. Lighter in body, but very silky yet. Drink this very lightly chilled, something like 60 degrees. These guys always have some interesting tradional ales, of which I am very fond of.
