Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottle. A very black and bubbly pour. Tatses dry and chocolaty. Not a bad flavor but I expected it to be slightly sweeter.

Pours to a transparent dark brown body with a thin beige head. The aroma is strongly elderberries and blackberries. Some barley. The flavor has coffee and chocolate in it. Light elderberry. Can hardly taste that. The palate is average. Fits well. Overall, this could be construed as a stout.

coffee, black, aminimal head, lightly bitter, but overall non-distinct flavor, medium body, overall not bad, but it doesn’t strike me as anything special

very dark pour small brown head some lace. smells sweetly of elderberry, blackberry hints of coffee and roasted malt. Dry palate some coating a bit thin. Dry cocoa light hop some bittersweet chocolate flavors some fruits as well.. Not to great.

(Bottle at Fynske Øldage) Black. No head. The elderberries are evident in both aroma and flavor. A mild beer with a slightly odd flavor. I love the brewery’s general concept though.

From the Scottish Highlands come this dark and earthy ale with an enticing name that rivals the mystery of the fog capped land it calls home. That is to say, I haven’t a clue what Ebulum means, but I do have some idea what it tastes like. After finishing the glass at a quicker-than-usual pace, I have to say I’m more impressed with Scottish industriousness and warrior code of conduct than with this beer. It pours a very dark black (I thought of cobalt at the time), and maintains a very simple smell of dark berries, presumably of the elder variety. Blackberry and black currants also feature heavily. Like most blackish beers, Ebulum builds on top of an over-bearing malts foundation and adds something of a unique twist. In this case, the elderberries are a welcome fruity topping to the thuggish chocolate and coffee flavors, but I would have preferred the berries to take something more a center stage role. Maybe a tolerably dark beer for those disinclined to the ways of malts.

black app. with minimal medium brown head..aroma of roasted malts (bitter chocolate, coffee, and dark berries)...flavor is quite similar, with a more of a berry bite...palate was a tad thin
