That is to say, I haven’t a clue what Ebulum means, but I do have some idea what it tastes like. After finishing the glass at a quicker-than-usual pace, I have to say I’m more impressed with Scottish industriousness and warrior code of conduct than with this beer. It pours a very dark black (I thought of cobalt at the time), and maintains a very simple smell of dark berries, presumably of the elder variety. Blackberry and black currants also feature heavily. Like most blackish beers, Ebulum builds on top of an over-bearing malts foundation and adds something of a unique twist. In this case, the elderberries are a welcome fruity topping to the thuggish chocolate and coffee flavors, but I would have preferred the berries to take something more a center stage role. This is perhaps the darkest color of beer - holding the glass up to the light it’s still pitch black. Nice sweet malty aroma with a hint of berries and chocolate. Tastes very much like a stout. Very good complex flavor and ultra smooth. There is a slight bitter coffee taste that is typical of most stouts, but the texture is so creamy. There is also a hint of berries in the finish. Moderate aroma with hints of berries- sweet smelling. Tasted earthy, with vegetable and fruit flavors. Finished mildly bitter. Palate was appealing with lively carbonation and alcoholic texture. Anyway, what to expect from such a beer regarded as an elderberry black ale, is not something i can quite grasp at present. The beer: Pours darker than expected being near black with a nice mocha head. Aroma wooo infinitly different from almost anythign iv ever had before. Mint, bubblegum, coffee, smoked ham..gee this could go on. Taste well i tasted it to cold and left it to warm, lightly bitter coffee going into mint choc-chip ice cream with molasses and port. ehhh i think this might be the wierdest beer iv ever had, but heeps of goodness alround!
