That is to say, I haven’t a clue what Ebulum means, but I do have some idea what it tastes like. After finishing the glass at a quicker-than-usual pace, I have to say I’m more impressed with Scottish industriousness and warrior code of conduct than with this beer. It pours a very dark black (I thought of cobalt at the time), and maintains a very simple smell of dark berries, presumably of the elder variety. Blackberry and black currants also feature heavily. Like most blackish beers, Ebulum builds on top of an over-bearing malts foundation and adds something of a unique twist. In this case, the elderberries are a welcome fruity topping to the thuggish chocolate and coffee flavors, but I would have preferred the berries to take something more a center stage role.
