Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

11.2 oz. bottle. Best before end: 04/06. A VERY dark mahogany pour with virtually no head. Roasty aroma that features some malts, chocolate, coffee and dark berries. Sweet, malty body that’s a little roasty. Some dark berries are present throughout. Decent body. A little grainy and oaty. Almost stout-ish. A pleasant surprise.

Burned bacon aroma. Black colour with off white head. Tastes of stout and dish water detergent. A realy off putting combination. Artifical and strange. An experiment gone completely wrong?

Pours a jet black color with a small amount of quickly dissapating whitish head. Very nice coffee, roasted sweet aroma. Flavor is bittersweet, jamish, coffee with a dry finish. Overall, definitely my favorite of the scotish ales set.

VERY dark, off white head fades quite fast.Lovely roast barley nose with fruit in the background ( this becomes more pronounced as the beer opens up) Remarkably smooth palate, with a good stout-like flavour, the fruit creeps up on the long lasting finish. Really didn’t know what to expect with this...it’s unique(as far as I know!) and delicious.

This is the first beer I ever had that the aroma overpowers the flavors, a fantastic aroma of coffee and Jam. Palate is a wee bit thin for the style this represents. coffee and a mild fruity flavor. Very enjoyable though

This was the first beer I ordered of the night, and I couldn’t have been more disappointed at first. The taste was a little flat, nothing stood out. However, it really grew on me, the intense elderberry flavor really crescendos into something terrific. Color is breathtakingly dark, aroma is almost there, hinting at the great flavor. A must try.

Bottle (330ml) Poured a nice dark ruby-black, with a minimal light brown head. Aroma is definitely tart berries (black current, blackberry, raisin, I assume elderberry too), with coffee / caramel / chocolate dark roast malts, some anise. The tart berries dominate the malt taste, but I also get some grain (rye? oats?) and tree fruits as well, a little hop bitterness emerges with warming and it finishes tart, fruity and balanced, albeit a tad acidic. Mouthfeel is acidic, a bit oily and at least medium-bodied - reminiscent of a mil porter, not a stout. Very pleasing all around, a delightful change from the paleagers I was sampling earlier. One to pour in a goblet and stare into a fire whilst sipping.

A nice throwback beer to older times. This beer is perfect for in the Autumn time. Winey fruit flavors collid with malt and nuttiness making waves of outstanding beer flavoring. This one is good cold straight from the bottle or enjoyed in a wine goblet. There is a nice hint of spice and earthiness that makes this beer one of a kind.
