Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

800th rating. Bottle at St. Andrews. Acts like a Swartzbier with its rich malt flavors and smooth body, amazed its not. Some slight dark berry undertones are noticeable. Other notes include vanilla, plum, wood, earth, licorice, malts, and cream. I love the fantasy of this brew. Epic

Dark black pour with copper and ruby hues. Very small creamy tan head that shows some lacing. Aroma is pretty crazy - sweet roasted malts, dark chocolate, tea and salty sea-water. Unfortunately there’s some underlying scent that conjures up images of dumpsters in alleys behind Asian restaurants. If there was any elderberry aroma in there it was pretty well hidden. Flavours are a lot tamer, mainly roasted malt and sweet chocolate. Pretty thin. Finish is more salty than bitter. Mouthfeel is way too thin, needs to be creamier.

Enjoyed at Cicero’s. Pour is black with a nice mid tan head. Aroma is malt and tye. Flavor is malt, roastiness, smoke, dark fruit. There is a lot going on in this beer and it is very interesting in that great Old World way. A cool beer.

bottle . pours black with a light brown head. some fruits and sweet malts. slightly creamy mouthfeel. neat.

Pours dark brown almost black with little to no head. Aromas of smokey oatmeal and choc coffee. Tastes of choc coffee and roasted nuts. Slightly bubbly with fruity finish.

Bottle poured a clear dark brown with garnet highlights and a lingering ring of brown foam. Aromas of charcoal, roasted malt, earthiness, bakers cocoa and light elderberry. Palate was light bodied and crisp with a lightly dry finish. Flavors of roasted malt, charcoal, bakers cocoa, light elderberry and light earthiness with a crisp dry roasty finish.

Bottle. Pours dark brown with a tan head. Roasted malts in the aroma, with a berry like sweetness. The flavor brings roasted malts and grains, some fruity berry sweetness, and a hint of smoke as it warms. Very good, very drinkable.

Hell if I know what elderberries smell like, but this is earthy and pithy, dark and roasted in the glass with a small consistent tan head. Ripe berry, earth, stemmy wood, sweet, chewy and amazing. Swirls with complexity, great beer.
