Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Licorice and berries in the aroma. Roasted malt flavor with licorice, laurel, red berries. Just a bit of fruity sweetness shows itself, especially in the aftertaste.

Bottle, chilled. Very very nice. Smells like a dessert bread and somewhat like a stout. And looks much like one too save the fact that it had no head but thankfully was carbonated. Tastes just like it smells sweet and malty with a definite coffee taste. And it even tastes a little like oak with just the right amount of bitterness added. A very light berry taste to this one though. The only thing bad about this ale really, is that the elderberries are hard to taste. I wish it was stronger. Still this is one good ale. Aftertaste is like stout but with a little of berries.

I don’t know what elderberries are but they are not in here. This is just a very watered down stout. Has all the same characters except body, and is very bland overall.

Sour and grapey. Dark brown with an off white head. Cidery and thick with a small bitter bite in the end.

Dark brown on the pour, tan thin head around the edges of the glass. Nose of toasted malt, berries, coffee, like others have said, similar to those of a stout. Flavor is dry and consists of tartness (from the elderberries?), roast, smoke, and finishes just as dry with the fruity characteristics becoming more pronounced.

This is a dark black ale with floral scents and a taste that brings to mind a light porter. This was the final beer I tried and actually turned out to be my favorite.

poured dark brown with a tan silk head, round frothy bubbles. nose of berries and choc malt. more currantesque flavors on the palate and dark fruits that blend with the malt character. some tobacco. a bit lighter then your typical black and black at an irish pub. nice and easy to drink.

Nose was more complex that i had expected. no clue what an elderberry smels like but i do get berrys in the nose, seems like somewhere between blackberrys, blueberrys, and raspberrys, i also get roasted nettles in here. moderate carbonation and fairly well bodied with a sour finish.
