Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Tastes like a sweet stout with a handful of berries thrown in. Little to no carbonation/head, and the berry flavor is easily perceptible. Not bad.

Black, small head. Aroma from tar, coffee and some violet. Flavor from slaty licorice and coffee. Mild finish.

Bottled. A black beer with practically no head. There is a smokiness to the smell after an initial fruitiness. The roasted oats comes through throughout. There is very little fruit in the flavour, which is more typical of a sweet stout. A good beer but a little bit too much going on in an unbalanced manner.

Stout’ish. The berries come through very clearly. Too clearly to my taste. Too sweet and too thin

(on bottle) Smells like vodka witn black currant, very sweet and alcoholic. Was looking forward to the taninsweet and stron elderberry flavours, but instead I get a roasted, watery feel. Why? I have had porters with less roastyness, but this was suppose to be elderberry-ish.

Dark as night, with thin or no head. Chokecherry, earth, and strange berry notes. Slight prickle in the mouth with roasted flavors. Berry, chocolate, witha flat bitter finish. Not sure what to think, not a big fan of the beer though it has an inticing quality to it.

Black with a small head. Aroma from tar and some licorice. Flavor brings tar as well, with cocoa and some vinous touches in the finish.Some elder was found as well.
