Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

The only drinkable one of this bunch of traditional ales. Pours a dark reddish purple color with a foamy light brown head that lightens as it is exposed to air. Nice lacing. Nose is roasted dark malt and dark jammy berries which I suspect are the elder berries. Mouthfeel is supple and the taste is roasted coffee and more berries. Not bad.

Bottle: Part of the Heather sample pack, comparable to a stout / porter with a slight sweet backnote. Aroma is confusing, herbal and piney, the Ebulum is more potent than the other Heathers.

Awesome birra che me son bevuto je bev al Pub del Duca jerisera allotta che ne ebbi voglia per un poco del tempo in cui vissi e non la bevvi prima di quando la ho bevuta senza apostrofo per carità se no mi sballa tutto quanto. Strepitosa ale al sambuco dal colore scuro e dal tono carezzevole eppure aggressivo, una delle migliori bevute della serata (ovviamente senza contare i lambic)

Dark brown colour. Beige head, mostly lasting. Aroma is spicy, fruity, pepper. Flavor starts heavy sweet.

11.2 oz bottle. Pours black with a dark head. Doesnt have too strong of an elderberry smell, much more like a chocolatey or malty smell. The taste is very chocolatey, but with some definite fruity and berry flavors.

Pours ink black with very small brown head. Aroma of berry and malt. Flavor is stouty and has a nice bitter edge with fruity/berry hints. Very smooth.

Spycy aroma of elderberry. Small light-brown head. Fully diminishing longevity. Clear amber body. Heavy sweet flavor. Medium palate.

Pours a deep brown colour with ruby red highlights and a very thin tan head. Smells like deep roasted malts, and some coffee. There may be a hint of chocolate in there as well. Smells like a nice porter or a bit of a stout maybe. Up front the taste is light and sweet. Finishes very chalky and roasted bitter. There’s a lot of coffee flavours in it. Carbonation is low, but it works for this beer, and it is a fair bit creamy, but not downright chewy.
