COMMERCIAL DESCRIPTION
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Pours black with thin tan head and some lacing. Notes of roasted malt and berries. Well balanced with light taste of berries that accents, but does not overpower the grains and hops. Goes down smooth.

Bottle from the LCBO. Pours a dark opaque brown with just a surface film of tan head. Nose is roast malt with caramel, coffee, dark fruits and a hint of vanilla. Medium sweet with cocoa and coffee and light berry notes. Mouth is medium and creamy with soft carbonation.

The aroma is faint, roasted, malty with a bit of caramel. Slightly reddish black, clear so far as the blackness allows, the head is small and not for long. Sweetish, a bit bitter, a bit tart. The body is below medium, the carbonation soft, and the finish oily and sweetish. The whole is not actually bad but one could easily find something better.

Aroma: Fruity sweet and slight sour. Flavor: fruity sweet like berries with a hint of cognac. A watery mouthfeel. Color: very dark redish brown with a white head.

Bottle at the Doric Arms, Edinburgh on 16 May. Poured a very dark ruby, with a beige head, which dissipated to a halo. Aroma of blackcurrant cordial, burnt malt and herbal, medicine-esque notes. Fairly light body, but I don’t think it’s supposed to be a thick stout kind of a dark beer. Fruity flavours, more blackcurrants, blackberries, prunes, mixed with coffee. Finish was burnt bread, dark chocolate and raisins.

Bottle @ home. Aroma of some smoke. Fruit. Maybe the elderberries. Very dark brown. Tiny lasting off-white head. Smoked. Caramel sweetness. Light bitterness. Finish is little bitter. Soapy to oily texture. Light carbonation.

From Belair Fine Wines. Floral & slight fruity aroma. The elderberry over powers to much in this beer. It lingers a bit to much i think.

vanilla, woody, raisin, resin, aromas, body is black with reddish hue, no head, medium sweetness, medium body, creamy, flat, with a cherry kind of flavoured aftertaste, its nice but not incredible. bottle from beers of europe.
