Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Poured black with a small head. All the elements of a good stout( dark chocolate, coffee, roasted malts) that laced nicely with a mild taste of berries. Nice, I like!

pours a deep brown with ruby highlights and light tan foam. Aroma of sweet malt, light coffee and fruit. Flavor is light roast & sweet malt with sulfury molasses with some interesting earthy components followed by a nice dark berry/fruity tang on the finish. Fairly thin body with moderately low carb.

Brown colour, small tan head. Aroma has caramel malts. Flavour has roasty and caramel malts, molasses and some fruits. Interesting.

A deep dark ale with a creamy thick moka head. Afruity burned caramel malt in aroma, light coffee notes. In mouth, a good coffee malt, light roasted notes, sweet chocolate, medium bodied. Overall, vey akin to a good porter, LCBO gift set 2006. BB Apr 2007. Enjoyed August 20, 2008.

Bottle that had been passed onto me by Craig, cheers mate, consumed in a field at Cropredy Festival 08 Pours dark brown with light tan head. Tastes quite rich also little bit sticky, some nice dried dark fruits and the elderberries give this a nice slightly sour twist. Tasty beer, I also get some dark chutney and molasses.

Pours dark brown, almost black with one finger tan head. Aroma is ripe fruit, roasted malt, and spices which I can’t exactly pinpoint. Flavor is quite roasty- along the lines of something you would find in a porter with the herbs and spices slightly noticable. Palate is of average body and not overly think or thin- just in the middle. Interesting, but not outstanding.
