"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Oh gosh, this was nice. Dark brown with ruby notes, a caramel and pink-tinged head suggesting the fruit. An aroma halfway between a milk stout and a raspberry Imperial stout, roasted and fruity, some elderberry, blackberry, raspberry, a little bit of alcohol (esp. as it warms), plus chocolate. Thin body suggesting more porter than stout. The palate is a weak spot: nice frothiness, like a soft Belgian ale, but once that fizzes away in the mouth there isn’t enough body in it (slightly watery). The finish is nicely burnt, not really bitter in any degree. This is underrated--a very nice fruited porter, essentially. And it cures influenza and rhumatism too!

All I could think of while drinking this was Monty Python and the Holy Grail. So I think I was laughing most of the time while trying to rate this one. Dark, deep bron color, with just a little tiny head that fades into a creamy rim. A strong medicinal aroma, alchohol and dark fruits. The texture is almost oily and tannic, strange mouthfeel. Some bread, roasted malts and a strange fruit flavor I am assuming is elderberries. This just kind of is what it is, not alot happening with this beer but worth trying.

330ml bottle from Bottleworks BB Aug 09; Nose of coffee, locorice, berries, and a very slight background menthol note; extremely dark but transparent brown with a medium, glass-lacing tan head; flavor has locorice, slight berries, and coffee in the background; finish is very light menthol and bitterness. Unusual brew!

Bottle, chilled. Very very nice. Smells like a dessert bread and somewhat like a stout. And looks much like one too save the fact that it had no head but thankfully was carbonated. Tastes just like it smells sweet and malty with a definite coffee taste. And it even tastes a little like oak with just the right amount of bitterness added. A very light berry taste to this one though. The only thing bad about this ale really, is that the elderberries are hard to taste. I wish it was stronger. Still this is one good ale. Aftertaste is like stout but with a little of berries.

(Bottle, Haket, Gothenburg, 1 Aug 2007) Black colour with brief beige head. Roasted, malty nose with notes of chocolate and liquorice. Roasted, malty taste with chocolate, coffee, liquorice, notes of citrus and elderberries. Slightly tarry. Very complex beer with the elderberries lingering nicely in the background. Nice!

(11.2 oz bottle: Part of the "Historic Ales from Scotland" giftpack) A scrumptious black ale that is malty, very roasty, moderately sweet, and mildly bitter in the finish. Not quite sure what elderberries smell or taste like, but there is a moderate tart berry flavor to this beer from start to finish, but especially late. The nose is quite roasty, with a tart berry aroma that’s much better than the French Soldiers would lead you to believe. Very light carbonated on the palate, medium in body. Opaque and very dark brown with a ruddy hue. Headless pour, only a very small rim around the glass, and no lacing either. Not quite as good as Kelpie, but comes in maybe just slightly ahead of Alba in the giftpack.

Bottle: Near black with a ruby hue in the light and a light khaki head. Aroma is light roast, vanilla, plum, elderberry/currant notes. Velvety with mild carbonation. Flavors encompass currant, tobacco, smooth mild roast/ dark chocolate, black malt, some subtle spice when it warms (mint/ginger?). Dry throughout and very subtle. A nice Traditional Ale.

Dark, malty fruit aroma with cocoa almost a whiff of cinnamon. Opaque brown with a stiff tan head. Tangy and homebrew-like. Dark malts give ita a porter/coffee taste. Finishes quite bitterly, medium heavy body without a whole lot of residual CO<sub>2</sub>. Metallic on the lips. Clingy aftertaste. Technically decent, but I didn’t enjoy this on an empty stomach.
