COMMERCIAL DESCRIPTION
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottled, filtered, 330ml. Black with ruby hue, tan head. Lovely deeply flavoured body witth liquorice and peaty notes, fruity sweet but also with the drying effect of elderberry which has an earthy taste. Late on there is a smoked note with a rush of alcohol. I enjoyed it.

(bottle) Almost black coloured hue with a brown and short foamy head. Moderately sweet roast-malty aroma with caramel, berry-fruity (cassis) and spicy notes. Moderately sweet flavour with a tinge of bitterness, medium bodied with a smooth carbonation. Roast-malty base with notes of caramel, chocolate, leather and subtle berry-fruity notes; moderately dry and bitter finish with roasted malty, spicy hoppy and warming alcoholic notes. Likeable brew. 29.XI.09

Bottle. Poured dark reddish brown with an average frothy brown head that was mostly lasting with good lacing. Moderate roasted malt, tart citrus and earthy aroma. Medium body with a sticky texture. Medium tart earthy sweet flavor with a medium sour finish of long duration. This is a very complex and one of a kind beer.

UPDATED: JUL 29, 2007 A Mes rate: Bottled from a bar in Manchester round the corner from This and That. Black and opaque with a tan head. Complex brew with dark malt, vanilla, lovely smoky peaty notes, very Scottish. A little barley in there too. Bitter hoppy finish balances it out really well. Great stuff.

Vollmundig malzig-cremiger Geruch, röstig. Stout-mäßig malzig-cremiger Antrunk. Ab dem Mittelteil hintergründig fruchtig was wohl den Holunder darstellen soll. Nicht süß, sehr passend. Leicht alkoholisch wirkend, bei näherer Betrachtung scheint dies die stärker werdende Fruchtigkeit zu sein. Cremig malziger Abgang milder, harmonisch. Test vom 29.9.2008, Gebinde: Fass Noten: 9,12,12,13,12,13 - 12,25

A deep dark ale with a creamy thick moka head. Afruity burned caramel malt in aroma, light coffee notes. In mouth, a good coffee malt, light roasted notes, sweet chocolate, medium bodied. Overall, vey akin to a good porter, LCBO gift set 2006. BB Apr 2007. Enjoyed August 20, 2008.

Bottled. Dark ebony coloured beer with a thick lasting dark tan head. Aroma of vanilla, elderberry, light roasted barley and floral sweetness. Flavour is malty, coffee, cola, floraly, fruity berry aroma. finish is also flowery and a bit roasty. Quite good.

Pours a transparent dark mahogany with ruby hues and a thin ring of spotty off-white head. Aroma of dark fruits and some mild peat and caramel malt. Starts well-carbonated and fairly full with some lightly smoky and fruity tartness before a drier earthy finish. An interesting and fairly complex brew.
