Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Dark mahogany, bubbly tan head. Tar, somewhat burnt aroma with hints of tobacco and elder. Decent bitterness. Flavour is mostly roasted. Some notes of coffee.

11.2 oz. bottle. Best before end: 04/06. A VERY dark mahogany pour with virtually no head. Roasty aroma that features some malts, chocolate, coffee and dark berries. Sweet, malty body that’s a little roasty. Some dark berries are present throughout. Decent body. A little grainy and oaty. Almost stout-ish. A pleasant surprise.

Pours dark brown/red then look black with slight red glow. Small mocha colored head. Smells earthy, and fruity. Rich full taste, kind of tastes like a stout but fruitier. I can’t really describe the exact taste. It goes down pretty smooth but leaves an aftertaste.

This was the first beer I ordered of the night, and I couldn’t have been more disappointed at first. The taste was a little flat, nothing stood out. However, it really grew on me, the intense elderberry flavor really crescendos into something terrific. Color is breathtakingly dark, aroma is almost there, hinting at the great flavor. A must try.

Dark pour with a long lasting tan head and good lacing. Aroma of hops, coffee and berry. Good touch of bitterness with the strong chocolate/coffee flavors. Nice hoppy aftertaste without going too far. Great Stuff!

Pours a dark ruby brown with a off-white head, sweet berry and some faint blueberry fragrances, faint brown ale aroma, some grassy weed fragrances, faint bitter berry and chocolate flavors, flavors were not big except the berry, not real interesting, little alcohol in the sip, very dry on the palate, this was so so…

Couleur presque noire affichant des reflets rougeâtres à la limite du spectre. Faible mousse brume pâle n’adhérant pas à la paroi du verre. Aucun dégagement gazeux n’est apparent lors du service. Arômes de grains rôtis, de café, de pain grillé et de fruits plutôt noirs. Beau profil de malt grillé en bouche accompagné d’une sensation vineuse et fruitée (sureau, prunes noires, rouges). Un aspect rôti arrive en finale et continu d’exister pour un long moment après chacune des gorgées. Corps d’épaisseur semi mince à moyenne, carbonatation piquante et peut-être un peu trop présente.

Pours deep red/almost black with head that dies instantly. Berries and moderate roast and hints of chocolate in nose. Flavor follows nose, though roasts dominate. Feels a little watery.
