COMMERCIAL DESCRIPTION
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

UPDATED: JAN 6, 2014 Bottle, 033. Dark ale, Light aroma and no foam for this dark, ruby colored beer. Its sweet flavor is well balanced and enjoyable. Roasted oat in aroma.

Bottle @ friends/the chef. Appearance: pours clear dark-brown with small short lived soapy off-white head and lacing. aroma/taste: caramel, berries, chocolate and some herbal hints. palette: medium aroma, light to average carbonation, medium body, medium to notable sweetness, somewhat balanced by an average bitterness, medium duration and an oily texture. Overall: Tasteful and complex dark ale.

Coarse persistent foam. Ebolum is a Traditional ale brewed with elderberry, It is black, thick and form fine lace in the glass. The aroma is most hard roasted malt but with a little ingenuity I can also track elderberry. The taste is very composed of good elements. I can trace elderberries, dark chocolate, toasted bread, caramel malt and a little coffee. Fullness is good, but the aftertaste little watery. The bitterness is absent and it has only a very small and virtually anonymous hoppy flavor towards the end. It is a very different ale to taste because it sticks out so far from expectations, but conversely, it also has many good and fantastic elements. I think it is excellent.

Pours black with a brown head. Aroma is malt, roasty and some fruit. Taste is lightly roasty and fruity. Not bad.

Elaborada con bayas, según receta del siglo XVI. Negra casi opaca. Casi sin espuma. Aroma muy frutal, cereza principalmente. Carabonatación muy baja, cuerpo medio y textura muy suave y cremosa. Excelente sabor, muy equilibrado entre dulce caramelo, frutas rojas y vino tinto. Amargor final muy contenido y agradable recuerdo. Muy buena.

Brown/black depending on lighting, creamy foam on top. Malty roasted, and coffee notes, with that sourness of the elderberry. smooth and silky mouthfeel, coffee and chocolate taste with the elderberry just pushing through. nice and long finish, with the malty roast lingering.

Aroma: Liquorice, and coffee. Somewhat malty.
Appearance: Dark, almost black, brown. Light caramel head.
Taste: Malts, liquorice, and a sweet elderberry aftertaste.
Palate: Bitter at first, with a sweet aftertaste. Light body. Medium carbonation.
Overall: Not bad. Not too strong, considering the ABV. The little elderberry kick in the aftertaste is quite nice. Otherwise, it borders on average.

pours a dark with brown edges, a dense mocha head which disipates down slowly, minimal amount of lacing. Aroma is dark malts, treacle, elderberries. taste is earthy, brambles, soft fruits. palate is really smooth, smallest about of carbonation.

Bottle - deep dark red with a foamy light brown head. Good retention and lacing. Aroma of coffee, biscuit, caramel and dark berries. Taste of coffee, caramel, grass, roasted malts, a little sourness and porridge. Medium body, low carbonation.

aromas of dark and milk chocolate, mild roast, vanilla, herbal, fragrant hops, and really a whiff of elderberries. Silky smooth mouthfeel, thinner towards the end, a lot of dark chocolate again, nicely balanced by vanilla/oak, herbs (majoram) and a light sourish feel and taste at the end.

Bière noire aux baies de sureau hièble (donc ebulum), introduite par les druides gallois en Écosse au 9 ème siècle. Qu’est-ce qu’ils ont bien fait, et surtout de garder la recette !! Ceci dit, celle qui prévaut à la réalisation de cette bière date du 16ème. Insistons aussi sur la magnifique étiquette à la superbe graphie. Niveau abv de 6,5 % . Les céréales sont de l’orge et de l’avoine, et puis nous retrouvons en ingrédient notre imparable myrte des marécages. Couleur noir intense, d’une opacité quasi totale. Mousse qui est un nappage beige moyen à 1 mm, très joli. Arômes de café noir très délicat, chocolat fondant, fondant au chocolat, malt noir, noisettes grillées. Superbe. 1ère bouche soyeuse à la splendide entame sur le café noir, chocolat noir, pointe de baies sèches très fines. Arrière-bouche longue, dense, complexe. 2ème au magnifique équilibre, malt noir/café/baies/céréales grillées. Arrière-bouche très fine, pleine de nuances, à la magnifique tenue. 3ème à la tenue exceptionnelle, et montée en puissance sur l’avoine grillée. Arrière-bouche quasiment parfaite. Longueur avec une avoine de plus en plus fine. Jambes très finement marquées. Levure douce, végétale. Alcool à la progression douce sur la longueur, mais très efficace sur les saveurs, et au niveau parfait pour cette bière. Finale qui est un plaisir, un régal, un pur bonheur. CONCLUSION : l’avoine est une céréale exceptionnelle, je l’ai déjà dit ailleurs, mais elle est portée ici à un réel sommet. Nous pouvons aussi souligner le mérite d’avoir retrouvé cette ancienne recette, et de la brasser aussi bien. Rien que pour cette bière, la série des Historic ales from Scotland mérite amplement d’exister. Nous en remercions les Williams Brothers du fond du cœur.
