Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

This bottled brew poured a very small head of medium to large sized mostly lasting brown colored bubbles that left behind a poor lacing. The body is an opaque unparticulated black with no hope for visible carbonation. The aroma is very nice with notes of molasses and dark malt. The mouth feel is smooth and thin with a finish of coffee flavor. The flavor is very subtle at first then is sneaks up on you and grows into a more tasty molasses coffee mix.

Bottled. Deep dark brown body with a purple hue, little or no head. Rich roasty, chocolate flavours, balanced by a mildly acidic fruity tone, all held together with a light, refreshing body that would be recognisable to lovers of Porter. This is a lovely drop and real surprise to be pulling out of the hat on a Tuesday night.

Bottle pours black with no color showing through light. The head is minimal and brownish. The aroma is malty like a Scotch Ale and smoky like the Alaskan Smoked Porter I just rated with not much in the way of a hop. The flavor starts out like a porter, but then goes into a fruity and salty middle, and somewhat acidic finish. I think I now know what an elderberry tastes like. It seems to linger for some time. The palate is nice and rich and smooth. Overall, I like this.

Bottled. A black beer with practically no head. There is a smokiness to the smell after an initial fruitiness. The roasted oats comes through throughout. There is very little fruit in the flavour, which is more typical of a sweet stout. A good beer but a little bit too much going on in an unbalanced manner.

Bottle - 330ml. Black body with ruby glints and a beautiful thick and lasting beige foamy head. Nice malty/oaty aroma with coffeeish and roasty notes. Very well balanced taste with a good combination of malty, hoppy and roasty flavors. We can also detect some hints of dark berries. Leaves a long bitter and roasty aftertaste and a subtle warming effect. Very interesting and enjoyable. Thank you PrimeMinister!

Bottle: Puts a deep black ale in the glass with a smallish sticky mocha cap that reduces to a ring and laces lightly. Aromas of bitter-sweet cocoa over succulent-tart berry tones...some musty wet grass and woodsy tones in the back......excellent subtle nose. Profile: Imagine a rich coffee stout infused with wild botanicals and musty berry fruit and you will nail this dark elixer...finish is wet and long and infused with the stout-fruit tastes but slightly bittering from the hps.....very nice dark ale....more like a fruit and herb flavored thick porter or stout.

What’s not to like? A fruity smooth stout with the aroma of its roasted barley, good stout like thickness, no coffee. And elderberries are as healthy as wine because they are blue, seriously.

Bottle. Near black with a large tan head. Aroma of roasted malts and chocolate. Alot more fruit in the aroma; can I taste elderberries? Possibly. Sweet and malty, slightly smokey with some licorice. Fruity aftertaste. Nice fullish mouthfeel. Very good.
