Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottle. Dark pour with a beige head. Fruity aroma with some blackberry/blueberry notes. Lots of malt in the aroma. Flavor has berries, raisins, caramel malt, toasted malt and a hint of bitterness. Interesting beer.

12 oz bottle. Pours almost black with a glowing brown hue. Aroma is very floral, very nature oriented. Lots of berry, roasted malts, grassy, dark fruit. Flavor is very interesting. Nice robust maltiness starting out followed by a slight berry fruit tartness. Dark malts abound through the finish along with the dark fruit and a woodiness that gives a nice round character that never gets too sweet, tart, bitter etc. Medium body and a sharp carbonation. I really enjoyed this beer, a fun and different flavor but still enjoyable, not too out there.

Quite delicious. both sweet and bitter with flavours of berries and coffee. Aftertaste of dark roast coffee lingers.

Bottle. Pours extremely dark ruby, almost black, with a small light tan head that doesn’t last long. Aroma is of aniseed, roasted malt, pepper, berries and cloves. Flavour is similar to the aroma but is pared down a little; there is malt, chocolate, pepper, liquorice and a hint of the berries, but it is all well integrated and the individual flavours are all fairly subtle. The elderberry is definitely noticeable, but if it weren’t for the labelling, it would be possible to mistake it for a combination of flavours from the other ingredients. Still, a very nice beer and another great traditional Scottish ale.

Dark coffee, average head, nice bubbles. Light on gas. Very intensive aroma dried mushrooms, roasted aromatic coffee, sweet flower. Light no taste buds, some bitterness, sweetness light and neat aftertaste. Nice and warming.

Bottle. Nice, subtle roasted malt notes, with an lightly acidic, lightly vinous mouthfeel. Only slight hints of berrries. But if you had it blind, you may not pick out the berries. I thought this was a nice one.

Bottled, best before 12/06. Pours a super deep ruby color. Minimal head. Sweet, smokey aroma. Some red wine type aromas as well. Flavor is an intersting smoke flavor that is complimented by the flavor of berries. Finish is roasted maltiness. Very enjoyable brew.
