Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Dark coffee, average head, nice bubbles. Light on gas. Very intensive aroma dried mushrooms, roasted aromatic coffee, sweet flower. Light no taste buds, some bitterness, sweetness light and neat aftertaste. Nice and warming.

Bottle. Nice, subtle roasted malt notes, with an lightly acidic, lightly vinous mouthfeel. Only slight hints of berrries. But if you had it blind, you may not pick out the berries. I thought this was a nice one.

Bottled, best before 12/06. Pours a super deep ruby color. Minimal head. Sweet, smokey aroma. Some red wine type aromas as well. Flavor is an intersting smoke flavor that is complimented by the flavor of berries. Finish is roasted maltiness. Very enjoyable brew.

Dark ale, with red shades, wonderful thick head. Roasted malt aroma, lightly fruity. Classic stout taste; the fruits are very difficult to distinguish, they just add a light acidity. Good roasted and hop final.

Dark, malty fruit aroma with cocoa almost a whiff of cinnamon. Opaque brown with a stiff tan head. Tangy and homebrew-like. Dark malts give ita a porter/coffee taste. Finishes quite bitterly, medium heavy body without a whole lot of residual CO<sub>2</sub>. Metallic on the lips. Clingy aftertaste. Technically decent, but I didn’t enjoy this on an empty stomach.

Black body with a thick chocolate head that sat a tad too thick. The roastedness of the aroma had a fruit note or two and lent a robust quality to this brew. Medium body with berry notes which add a pleasant component to this barley-rich beer. The grainy component of this beer along with the light berry/wine notes makes this an enjoyable experience and a beer worth trying again.

A porterish, roasted liveliness unexpectedly surveys a familiar territory...Elderberries (very similar to blackberries, it seems) waltz homogenously with the lactic creaminess which appears midway...Well-crafted, a little smoky, but relatively unthreatening dark ale...

Bottled: Brown/black coloured. Brown medium sized head. Lasting. Is fruity and malt with clear notes of elderberries. Has a good malt charachter. Is quite well balanced and ends up malty and light spiced.
